I found this insect spray that claims to respect the environment and to be less toxic yet effective. The label carries warnings about breathing the fumes, ingesting, etc. but also claims the product is non toxic and not hazardous to health. I would like to know more details about the active ingredient, Bifenthrine, and more specifics about whether this is really an environmentally friendly product.

Assuming that the ingredient is bifenthrin, it is a derivative of natural chemicals (pyrethrin) that are produced by plants. This fact is good because there are natural pathways to break down the chemical.

There is no way someone could call this chemical to be ecologically friendly, since it is hundreds to thousands of times more toxic to aquatic organisms than most pesticides on the market, except those whose purpose is to kill fish. Ironically, pyrethrins as a rule have very low toxicity to humans. If that product is sold in the USA, and claims to be non-toxic, the label probably does not comply with Federal laws.
