Well this is what my fiancee and i did.

1. Checked out http://www.cruisereview.com and http://www.tripadvisor.com on various cruiselines and ships.
2. Went to AAA's website and checked out various cruises and chose a nice one for a good price.
3. After reserving the stateroom, we then looked at flights to the departure port. we chose a flight the day before the ship left and the day after the ship got back.
4. Took a look at the excursions we could chose. Looked again on tripadvisor and found some excursions we really wanted to try.
5. Looked and asked around about what are the "must pack" ideas and things other cruise goers thought would be good to have on a cruise.

we had a nicely organized file jacket with our excursions, our cruise papers, passport information, information on the ship, etc. and brought it with us on the cruise.

Our family and friends were very impressed with our organization.

The ironic thing is, we ended up being diverted because of Tropical Storm Ernesto so our organization for our excursions were all for nothing. BUT that won't stop us from doing the same thing the next time we take a cruise.
