Any roast (pork, beef, whatever or whole chickens), cut up potatoes and another veggie with some broth. And you're good to go. There are tons of recipes online for slow cookers. Put it together the night before and turn it on in the morning and supper is done when you are home. I have also made two meals instead of one at the same time and have frozen the second meal. There will come a time when those second meals will allow you the freedom from having to cook.

Sweetie,If you are looking to save money,per portion in the process of making not only healthy meals but delicious meals pasta dishes are the way to go.Lasagna and Spaghetti are huge hits and you can make a good amount,so your not only getting quality,but quantity out of it as well.Beans are another thing that are easy to stretch,you can make a large quantities,but also get the quality out of the ingredients.You will want to build each meal around one particular ingredient,whether it be a vegetable or a meat.Soups,are a wonderful idea you can make a number of soups in large quantities for a fairly decent price per serving.Some soups,maybe a homemade patatoe soup,mushroom soup,make them from scratch.Especially if your feeding several people,those cans of soup are not going to do it.Also,make dishes you can reheat,not as the same dish but use as another dish by adding one particular ingredient.Such as,say you make a stirfry,(another idea there) one night,serve it with rice,the next night,add a little something different and serve with tortillas.You get more for your money when you serve it as two meals instead of one.Pasta,patatoes,beans,rice,tomatoes,onions,peppers,etc. Inexpensive items that you can build a meal around.Find items that are on sale,that your family likes whether it be a vegetable or another ingredient and stock up on it.Load your freezer,you will always have meals on hand.Good luck hun and have a good evening.

I come from a large family, I would suggest visiting the Campbell's Soup website, or Rachael Ray websites, they always have really good quick recipes. Rachael Ray also has several 30 minute meals cook books out on the market right now, they are great.

Zinfandel Minestrone
This soup is delicious and will serve a crowd!

1 pound hot Italian sausage
1 pound mild Italian sausage
1 chopped onion
3 carrots, chopped
1 zucchini, sliced
4 cloves garlic, chopped
3 quarts chicken broth
2 cans diced tomatoes
2 cans cannelloni beans, rinsed and drained
1 tablespoon dried basil
¼ cup Zinfandel
2 cups large shell-shaped pasta
Salt and pepper to taste
1 cup fresh grated parmesan cheese

1.Squeeze sausages from casings into a large pan. Cook until brown and crumbly, approximately 10 minutes. Discard fat.
2.Add carrots, onion, zucchini, and garlic. Cook for about 6 minutes until onions are soft.
3.Add chicken broth, tomatoes, beans, basil, and Zinfandel. Bring to a boil.
4.Add pasta. Reduce heat and simmer, covered, for about 10 minutes until pasta is tender.
5.Add salt and pepper. Serve into bowls and top with parmesan cheese.

When feeding a large group of people it's hard to beat two meals:

1) Roast turkey w/ potatoes and steamed vegetables.

2) Spaghetti & red sauce either with or without meatballs.

Add a green salad to either of these as a first course, and you're good to go.

Hey Capecod girl, Im from Salem MA myself... AS a reader stated before me, italian is the way to go.
my suggestion, though it is time cosuming is eggplant parmasean or shrimp/lobster scampi.
DONT listen to those people who just told you to make soup... who serves soup as a main course at a dinner party? lol

Thinly slice eggplants (3-4 will feed 8-10 people)... and bread, fry (or bake with olive oil) , layer with plenty of sauce (make your own, or I love 5 brothers or bertoli, any kind but marinari or garlic and roasted peppers are also good choices for sauce types).
layer some mozzarella and/or ricotta cheeses in the middle layer, and again put plenty on top... bake for 15-22 mins at 350 or so.

OR, if you dont want to spend so much time prepping your meal... try an easy dish like shrimp scampi or lobster scampi.
Garlic, white wine (dry), plenty of butter and Olive oil and a good loaf of crusty bread, good bottle of white wine, andyou got yourself a great meal.
I'd go to an italian recipe website to get the scampi recipes, don't trust recipes from people in other parts of the country... most italians settled right in our area, and really southern/western US don't know how to cook genuine italian as well as this area! Good luck... Bona Fortuna!

Have you tried Taste of Home magazine or its website tasteof home.com.

They have a section in the magazine for large family get-togethers.

Another magazine to try is Country Woman.

Make a simple Lasagna or a casserole. Mexican nachos with beef, and soups and chilis are also good for large family meals

Peter V had a great idea with Eggplant Parmesan. Is there a "Trader Joes" near you? They have awesome frozed breaded eggplant that makes putting this dish together a snap. Just layer the breaded eggplant, pasta sauce, mozzerella and parmesan cheeses. Your family will love it.
