Dear All,

I would like to deep fry some food later but i am unsure of what oil to use.

I understand that I need an oil that has a high smoke point/flash point but i have no idea about the oils. There are so many, olive, sunflower, car (just joking)...

Any help with this is very much appreciated.

Peanut oil is considered the best but it's also more expensive. But canola oil is good as well and is also one of the healthier oils. Also sunflower oil or just regular vegetable oil will also work. Actually just vegetable oil is probably the best bet... it's the cheapest and works just fine. If you're doing a lot of deep frying you can also buy a larger bottle of it. Olive oil is not so good for deep frying - besides its distinctive flavor it's just not a good oil for deep frying. It's also healthy but it's better for sauteing or salad dressing.

And also about peanut oil - apparently, for those with peanut allergies, you can deep-fry in peanut oil without getting an allergic reaction. I've been told that if you heat it to a high enough temperature, it will destroy the protein that causes the allergic reaction. My mom found this out - she is extremely severely allergic and ate french fries at a restaurant and later noticed it said they used peanut oil. So she asked and told them that they must be lying - but as it turns out they did use peanut oil and my mom found out later that that it's ok at a higher temperature. I wouldn't risk it at home if you have a severe allergy.

But, I digress. Like I said, vegetable oil is probably the best considering how cheap it is. Or canola is good too.

Alot of these answers suggest olive oil and even thought that is the healthiest of the oil to consume it is the worst to fry with. It has to lowest smoking point (point in which it can ignite and/change the flavor to boot by burning the oil). This becomes more of a fire hazard that any others. Also heating up olive oil to the smoking point ruins it's delicate flavor. Try peanut oil (highest smoking point) unless allergic. Most all other veggie oils are good and do not impart or override the flavor of the food that is being fried.

Canola and Peanut Oil... But beware, Peanut oil has a taste that will not be very good in certain dishes... for example, if you were going to fry some chicken wings, then add hot sauce to make buffalo wings... Peanut oil would give the wings a strange taste, because as you know, peanutty flavor ( tho slight) doesn't go with buffalo sauce.

But Peanut oil is best, its also very expensive... Dont use olive oil!

Oils with high 'smoke points', in other words, those which do not break down at deep frying temperatures, are best. Peanut oil, safflower oil, sunflower oil, and canola oil are some good choices.

Canola oil is great for deep frying. It has a high smoke point, so it won't burn, and it doesn't have any distinct flavouring to it. It's also high in omega-3's, but I think deep frying anything offsets any health benefits you might get out of it.

I only use canola oil for deep frying. Olive oil for all other cooking except for Asian cooking I use peanut oil.
