Does anyone have an easy but tasty recipe for chicken breasts? i've run out of ideas of what to cook for tea

my new fav chicken recipe is chicken one pot!

chop some chicken breast in to large chunks

roughly chop some root veggies (sweet potato, turnip, parsnip, potatos, carrots)

roughly chop some chives and spring onions

put in all in a casserol dish with enough chicken stock to cover, and leave it in the oven for about an hour. easy to make, easy to wash up - perfect combo. the chicken stays really moist and the veg tastes Fab!

Chicken and Tomato Casserole
Makes 4 servings

•Spray oil, for frying
•8 skinless chicken breasts
•1 onion, roughly chopped
•110g lean bacon cut into lardons
•110g field mushrooms
•1 tablespoon tomato purée
•300ml chicken stock
•2 bay leaves
•Salt and freshly ground black pepper
Instructions
1.Preheat the oven to 180°C/350°F/Gas Mark 5.
2.Heat half the spray oil in a frying pan and brown the chicken pieces. Transfer the chicken to a casserole dish.
3.Heat a little more spray oil in the frying pan and fry the onions, until beginning to brown, add the bacon and fry until golden brown and add the mushrooms and cook until any water they produce is driven off. Add the tomato purée and stock and bring to the boil. Pour over the chicken and add the bay leaves.
4.Cover the casserole and place in the preheated oven for 45mins -1 hour or until the chicken is cooked through.
5.Remove the chicken from the casserole and keep warm. Remove the bay leaves from the sauce and reduce the sauce by boiling rapidly until the sauce is the consistency of double cream. Taste and season if necessary.
6.Return the chicken to the casserole with the sauce. Serve immediately

i'm having honey and lemon chicken
Ingredients
4 medium skinless chicken breasts (about 4 1/2oz each)
4 tablespoons honey
1 tablespoon soy sauce
1 tablespoon lemon juice
salt
pepper


Instructions
Preheat the grill to medium.
Using a sharp knife, score the chicken breasts in a criss cross pattern on both sides, making sure not to cut right through.
Mix together the Honey, soy sauce and lemon juice in a small bowl and season well with salt and pepper.
Arrange the chicken breasts on the grill and brush with half the mixture.
Cook for ten minutes and then turn over and brush with the remaining mixture.
Cook for another 8-10 minutes or until cooked through.

or try sweet and sour

Ingredients
3/4 cup water
1/3 cup tomato ketchup
1/3 cup vinegar (malt)
1 tablespoon soy sauce
2 tablespoons cornflour
3/4 cup candarel

Instructions
In a saucepan combine water, vinegar, tomato and soy sauce. Make a paste with cornflour and a little water then add to saucepan. Cook and stir over medium heat until thickened and bubbling cook and stir for a further 2 minutes. Remove from heat and stir in candarel.

Special Notes
I love sweet and sour dishes so find this sauce satisfies my cravings for hardly any points. Adjust quantities to suit yourself as these quanties make a large amount of sauce. Serve with veg and chicken or quorn and enjoy!

I make a dish and call it stewed chicken.
You'll need -
chicken(boneless is better) I use 3lbs for my family
canned zucchini with tomato sauce(in the canned veggie isle) I use 3-4 cans
canned italian stewed tomatoes - I use 2-3 cans
fresh sliced mushrooms or canned if you prefer - 16 0z.
2 cloves minced garlic
fresh basil if available and parm cheese
Serve with brown rice, regular rice, angel hair pasta, etc.

Brown the chicken a bit in a large dutch oven or stew pot or you can transfer it to a crock pot. Add the zucchini, tomatoes, mushrooms and garlic and allow to simmer for 2 hours(crock pot will be 6-7 hours on medium. Serve over the rice/pasta or on the side, sprinkle with fresh chopped basil and parm cheese.
Make your rice or pasta during the last 20-30 minutes of chicken cooking time. Serve with a salad and some type of crusty bread. Even my stepkids eat this and they hate everything!

Try this simple Italian recipe for Hunter's Chicken
Take some peppers and an onion and finely chop and fry in 1 tbs olive oil, until soft (10-15 mins)
Next add some garlic about half a tsp or less.
Add some vegetable stock (Veg oxo will do) about a half pint and add the chicken breasts. reduce the heat and cook for about 20-25mins.
Serve on a bed of creamy mashed potatoes.

Cut the breasts into bite sized pieces. Marinate with soya sauce, ginger and garlic (just 1/4 teaspoon fresh chopped per breast), 2 tablespoons of brown sugar, several shakes of hot sauce, 1/2 teaspoon salt or more to taste, 2 teaspoons olive oil, Marinate for 20 minutes.
Grill on skewers under the oven grill closer to the grill for about 8 to 10 minutes total. Turn after 7 minutes. The liquid that runs out of it should be clear not pink.

In a baking dish, put down some thick onion slices, some chopped garlic, and capers if you have them. Season chicken breasts with salt and pepper and put them on top. Put in the dish about 1/2 cup white wine and the juice of 2 or 3 lemon wedges. Sprinkle with oregano and paprika. Bake at 350 for 25-30 mins.

Chicken Pot Pie
"Easy Chicken Pot Pie."

INGREDIENTS
4 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
2 (15 ounce) cans mixed vegetables, drained
1 recipe pastry for a 9 inch single crust pie

DIRECTIONS
Boil or steam the chicken breasts until done. Dice.
Mix together undiluted soup, canned vegetables, and diced chicken. Pour mixture into pie shell, and cover with the second crust. Crimp the edges, and make slits in the top crust.
Bake at 375 degrees F (190 degrees C) for 45 minutes, or until crust is golden brown.

Yes, I love this:
Get the chicken breats and cut them up into strips.
Get some Schwatzes or similar BBQ chicken flavouring.
Put some flour into a sandwich bag - enough to cover the chopped-up chicken - along with the flavouring and shake up the bag. (Don't put to much BBQ flavour in unless you like it really spicy.)
Put the chopped up chicken in the bag along with the flour and give it a gool ol' shake.
Meanwhile, put some olive oil on to heat in a frying pan - enough to coat the bottom of your pan. Watch the pan and make sure it doesn't get too hot and set on fire.
When the oil is sizzling, add the chicken. Fry on both sides until cooked.
Get a bag of salad such as rocket and watercress or spinach or make your own salad.
Mix up some olive oil and vinegar in a small glass to make a dressing and pour over the salad.
Put the chicken on top of the salad and season to taste.
Open a bottle of wine and enjoy!

i just made this recpice last night! it was EASY and EXTERMLY tasty. both my roommates also LOVED it.

4 small boneless skinless chicken breast halves (1 lb.)
1 pouch SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
1/2 cup TACO BELL HOME ORIGINALS Salsa
1/2 cup KRAFT Shredded Monterey Jack Cheese



PREHEAT oven to 400°F. Coat chicken with coating mix as directed on package. Place on ungreased baking sheet.
BAKE 20 min. or until chicken is cooked through (170°F).
TOP each chicken breast with 2 Tbsp. salsa. Sprinkle evenly with cheese. Bake an additional 5 min. or until cheese is melted.
