How about roasted sweet potatoes?
Cut the sweet potatoes into bite-sized pieces (chunks or wedges). Add some salt, black pepper and your favourite herb (try oregano). Toss with some olive oil and roast in the oven until brown and crisp on the outside and soft on the inside.
Mmmmmm...maybe I'll make some tonight for dinner...

How about a small pasta side dish? Kids love that. Or steamed veggies with lemon? Or how about a new twist on the rice? Instead of plain ol' rice, make risotto! It has a much better texture.

a) Fried new potatoes - chop small new potatoes into quarters add some salt and some parsley and fry on a low heat with a little drizzle of oil until slightly golden brown! Small and fun, tasty but appealing to little ones...
b) Veggie Kebabs - slice and part boil some of your fav veggies and then add onto small skewers and roast in the oven until slightly crispy and serve -yummy!!

shred 5 lbs. zuchini into a colander. sprinkle with approximately 2-3 teaspoons salt & toss. place colander on a large plate in sink, and place a bowl of water on top of zuchini (or any heavy food safe item to weight down & squeeze liquid from zuchini). while zuchini is draining, thinly slice a bunch of green onions and finely chop 2 cloves garlic. to a heavy pan heated over medium high heat, add 2 tablespoons each olive oil & butter. when butter foaming has subsided, add onions & garlic to pan and saute. add zuchini (make sure most of the liquid has drained; empty the plate of liquid every few minutes until no or little liquid appears on the plate before adding to saute pan). reduce heat to medium or medium low and saute, stirring frequently, until zuchini is done. tell your four year old it is cooked worms or something equally disgusting, and he will probably gobble it right up...

I like to make buttered Parmesan pasta for a change...and everyone likes it.
I just make elbow macaroni and after I drain it I add enough butter to coat the pasta and add Parmesan cheese. Mix and serve.

What about steamed carrots sprinkled with brown sugar? Those are really good too and kinda sweet for the little guy.

Potato wedges...
Slice potatoes in to wedges and coat with olive oil. Put on a baking sheet and season with your favorite seasonings. Bake at 350-375 for 20 minutes, turn them over and bake for another 15-20 minutes. Serve with ranch and ketchup for dipping.

I like putting baby carrots and radishes in a food processor and grinding them up vigorously until they look like couscous.
Very tasty and light; nice bite too.

my 4 year old likes mac and cheese, raw carrots with ranch, sweet potato fries (just cut a sweet potato and bake, don't fry, to make it much more healthy), and veggies with a little cheese on them.

yam fries, you cam just call them wedges, take some yams, wedge them up, put a little seasoning on them and bake them just like fries until crispy... there oh so good.
