~~~~~~~~ Honeyed Bread and Butter Pudding ~~~~~~~~
Golden-brown bread and butter pudding has added flavour when it is baked with rum or brandy and a hint of nutmeg. This dish uses less butter than traditional recipes, and sweet honey instead of sugar.
Serves 4.
Oven: Preheat to 350 degF, gas mark 4

4 thin slices white bread
2oz / 50g butter
4oz / 115g currants
3 medium eggs
1/2 lemon
1/2 pint / 285ml whole or semi-skimmed milk
2 tbsp brandy or rum (optional)
2 tbsp honey
1/2 level tsp grated or ground nutmeg

Butter the slices of bread and cut each slice into 4 triangles. Grease a 1 pint / 570ml pie dish and arrange the bread in layers, sprinkling each with currants. The final layer must be butter-side up.
Separate the yolk from one of the eggs and grate the rind of 1/2 a lemon. Beat the egg yolk, the 2 whole eggs and the milk together, then stir in the lemon rind. Add the optional brandy or rum. Pour the liquid over the bread and spoon over the honey. Leave to stand for 1 hour.
Sprinkle the top of the pudding with nutmeg and bake in the oven for 30-40 minutes, until well risen with a golden-brown top. Serve .

Normandy Pudding

* 6 ounces bread crumbs
* 6 ounces sugar
* 6 small sour cooking apples
* 1 saltspoon ground cloves
* 1 teaspoon ground cinnamon
* 1 lemon

Peel, slice and core the apples, or chop them up not too finely; put them with all the other dry ingredients in a basin, and stir well. When thoroughly mixed, add the lemon juice and the finely grated rind of a half of it; also, a little brandy or rum if liked.Pour the mixture into a well greased mold, and tie over a greased cloth or paper, and steam for about three hours. Serve with white wine sauce. The use of rum or brandy is optional. The pudding is much more tasty if one or the other is added. Serve both the sauce and the pudding very hot as the latter is not so delicious when cold.

Caramel Bread Pudding
INGREDIENTS
6 slices day-old bread, cut into 1/2 inch cubes
1 cup hot water
1 cup packed brown sugar
4 eggs, lightly beaten
2 cups warm milk
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon salt

DIRECTIONS
Place bread in a greased 2-qt. baking dish. Combine water and brown sugar; pour over bread. Combine remaining ingredients; pour over bread. Bake at 350 degrees F for 50-60 minutes or until a knife inserted near the center comes out clean. Serve warm or cold.

I have two recipes for you to try...I have made them both several times last year & loved them.

Cajun Bread Pudding

INGREDIENTS

4-3/4 cups milk, divided
4 eggs
2/3 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/3 cup butter, softened
11 cups cubed French bread (1-inch cubes)
1/2 teaspoon ground cinnamon
2/3 cup raisins, optional
2/3 cup chopped pecans, optional

PRALINE SAUCE:

1/4 cup water
1/3 cup packed brown sugar
1/3 cup corn syrup
1/2 cup coarsely chopped pecans
1/2 teaspoon vanilla extract
2 tablespoons butter
Dash salt

SERVINGS 12

PREP 20 min.
COOK 45 min.
TOTAL 65 min.

DIRECTIONS

In a large saucepan, heat 4 cups of milk until warm; set aside. In a large mixing bowl, combine the eggs, sugar, vanilla, salt and remaining milk. Gradually add warmed milk, stirring constantly. Stir in butter. Add bread cubes; let soak 10 minutes. Add cinnamon, and raisins and/or pecans if desired.
Pour into a 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 400° for 45-60 minutes or until a knife inserted in center comes out clean.
For sauce, bring water to a boil in a small saucepan. Add brown sugar; stir to dissolve. Add corn syrup. Bring to boil; cook 15-20 seconds. Remove from the heat. Stir in the pecans, vanilla, butter and salt. Cut pudding into squares and serve with sauce. Yield: 12 servings.

Bill Nicholson's Krispy Kreme Bread Pudding with Butter Rum

2 dozen Krispy Kreme donuts
1 (14-ounce) can sweetened condensed milk (not evaporated)
2 (4.5-ounce) cans fruit cocktail (undrained)
2 eggs, beaten
1 (9-ounce) box raisins
1 pinch salt
1 or 2 teaspoons ground cinnamon
Butter Rum Sauce, recipe follows

Preheat oven to 350 degrees F.
Cube donuts into a large bowl. Pour other ingredients on top of donuts and let soak for a few minutes. Mix all ingredients together until donuts have soaked up the liquid as much as possible.

Bake for about 1 hour until center has jelled. Top with Butter Rum Sauce.

Butter Rum Sauce:

1 stick butter
1 pound box confectioners' sugar
Rum, to taste

Melt butter and slowly stir in confectioners' sugar. Add rum and heat until bubbly. Pour over each serving of Krispy Kreme Bread Pudding.
