INGREDIENTS
1 1/2 pounds ricotta cheese
16 ounces cream cheese
1 cup white sugar
6 eggs
6 tablespoons all-purpose flour
1 cup sour cream
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C.) Wrap the outside bottom of a 10 inch springform pan with foil to prevent water seeping in while baking.
Cream together ricotta cheese, cream cheese and sugar until smooth. Mix in the eggs one at a time. Add flour one tablespoon at a time, mixing well. Stir in the sour cream and vanilla. Pour mixture into a 10 inch springform pan.
Place cheesecake in a large rectangular pan filled with 2 inches of hot water. Carefully put into preheated oven without spilling water. Bake for 90 minutes.
After 90 minutes turn oven off, but leave the cake in the oven for another 60 minutes (do not open door).
Cool on counter for 60 minutes and then refrigerate. Serve when thoroughly chilled.

~~~~~~~~~~ Queen of Puddings ~~~~~~~~~~
This rich, old-fashioned dessert is a layered pudding of fresh breadcrumbs, strawberry jam and golden meringue. Queen Charlotte, wife of George III, was responsible for the rise in popularity of this pudding. The Queen thought that the sweet was a particularly nutritious and economical diah to serve to all the patients in her hospital - Queen Charlotte's Maternity Hospital, in London. This recipe is a healthier version which uses much less fat and sugar, making a low-calorie dessert. You might like to try serving this pudding with sliced strawberries, as they make a tadte accompaniment and are also very decorative.
1 large lemon
3oz / 75g fresh white breadcrumbs
1/2oz /15g butter
21/2oz / 65g caster sugar
3/4 pine / 450ml skimmed milk
3 large eggs
1 tbsp sugar-free strawberry jam
Sliced strawberries for decoration
Finely grate the rind of the lemon and place it in a bowl with the breadcrumbs, butter and 1/2oz / 15g of sugar. Heat the milk until hot, but not boiling and pour it onto the breadcrumbs. Mix well, cover, and leave to stand for 1 hour.
Separate the eggs, reserving 3 yolks and 2 whites. Whisk the 3 egg yolks into the breadcrumb mixture, then pour into a buttered 11/2 pint / 850ml pie dish and cook in the centre of the oven for 45 minutes. until the pudding is lightly firm to the touch.
Leaving the oven on, remove the pie dish and then carefully spread the strawberry jam over the top of the pudding, so that it is even.
Whisk the 2 egg whites in a bowl together, until stiff but not dry, then gradually whisk in the rest of the sugar a little at a time to make a stiff and shiny meringue. Spoon or pipe the meringue on top of the pudding. Return to the oven for about 10-15 minutes, until the top is lightly browned.
Decorate with strawberry slices if desired, or you can serve them separately on the side. Serve the pudding straight from the oven.

paula deens pineapple upside down biscuts
1 (10-ounce) can crushed pineapple
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) butter, at room temperature
10 maraschino cherries
1 (12-ounce) package refrigerated buttermilk biscuits (10 count)
Preheat the oven to 400 degrees F.
Grease 10 cups of a muffin tin. Strain the can of crushed pineapple, save juice for later. Combine the pineapple, sugar, and butter, and mix well. Divide the pineapple mixture among the muffin cups. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit. Bake for 12 to 15 minutes, or until golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

My favorite dessert is extremely easy. Take a yellow boxed cake mix and prepare as directed. Take a CLEAN finger and poke holes in it. Take a box of Jello (still in liquid form) and drizzle it over the cake. Take some cool whip and use as icing. Chill for 1 hour and serve. It tases awesome!!!
PS it's called a POKE cake.

CHERRY CHEESE BARS
CRUST:
1 c. walnut pieces, divided
1 1/4 c. all-purpose flour
1/2 c. firmly packed brown sugar
1/2 c. butter flavor Crisco
1/2 c. flake coconut
FILLING:
2 (8 oz.) pkg. cream cheese, softened
2/3 c. granulated sugar
2 eggs
2 tsp. vanilla
1 (21 oz.) can cherry pie filling (or try other fruit fillings)
Heat oven to 350 degrees. Grease 9x13x2 inch pan with butter flavor Crisco. Set aside. Chop 1/2 cup nuts coarsely for topping. Set aside. Chop remaining 1/2 cup finely.
FOR CRUST: Combine flour and brown sugar. Cut in butter flavor Crisco until fine crumbs form. Add 1/2 cup finely chopped nuts and coconut. Mix well. Remove 1/2 cup. Set aside. Press remaining crumbs in bottom of pan. Bake at 350 degrees for 12 to 15 minutes until edges are lightly browned.
FOR FILLING: Beat cream cheese, granulated sugar, eggs, and vanilla in small bowl at medium speed of electric mixer until smooth. Spread over hot baked crust. Return to oven. Bake 15 minutes longer. Spread cherry pie filling over cheese layer.
Combine reserved coarsely chopped nuts and reserved crumbs. Sprinkle evenly over cherries. Return to oven. Bake 15 minutes longer. Cool. Refrigerate several hours. Cut into bars, about 2 x 1 1/2 inches. Makes 36 bars.
I auctioned a plate of these for $100 at a fundraiser, everyone goes crazy for these!

The best dessert i ever had was the chocolate fantasy which i ate.

My grandmother's chocolate cake with home made frosting. There's a similar recipe on the back of a Hershey's Cocoa package. Unfortunately, my grandmother won't give me her recipe, so I can't give it to you.
Also, if you live in Western NY, OH, PA, check out Wegman's Ultimate Chocolate Cake - it's really REALLY good.
