We cruised Carnival in November, there was a number to contact the cruise line in the info packet. It stated that they could accommodate special diet restrictions, they just needed plenty of pre-cruise notice. If I remember right it was at least 2 weeks. Make sure you contact the cruise line before booking to verify.

I'm a vegetarian and I went on a cruise about three years ago. Regarding dinners at the main dining hall, I don't remember exactly what percentage of the vegetarian meals were also vegan, but I can recall a number of vegan meals. Our waiter was very helpful, and even brought us a vegetarian menu (I think your friends could ask for it).

The buffet had a lot of options, including salads, basic staple foods (fries, vegetables [although they may have butter in them], etc.). They also had sandwiches that you could order to your liking, and I recall having a couple vegan sandwiches myself. I'm a picky vegetarian eater, and I never was hungry.

The cruise line I was on was Holland America.

If you're concerned that they might not be able to get enough vegan options, you can always call the cruise line directly. I'm sure that they will be happy to accomodate any guests willing to choose their ship over another company.

You should contact the cruise ship directly to find out exactly how they would address this request. Most areas of the service industry will try to accommodate everyone to make them happy and get their business. Be very specific so you don't offend or insult your friends with a gift they aren't going to be happy with.
