While milk will help cut down on the burning, it's not always the best choice when eating some kinds of foods. Milk with buffalo wings? No way. That's what the ranch dressing is for. I think that even though chemically, milk helps you deal with the heat of spicy foods best, it's one of the worst choices you can make. There are better ways to cleanse the heat from your palate. Bread, celery, lettuce, water...

When selecting a drink to go with spicy food, you don't always want to cancel out the spicyness. I'd recommend a good beer, or if you're not into beer or alcohol, go with a soft drink. Go with something you like, that has a strong enough taste to stand up to what you're eating. Pepsi might be better for spicy foods than Coke, because it's sweeter, but it's really a matter of personal choice.

If you want a complementary alcoholic beverage, a good beer is a fine choice. Pale ales have been said to be good compliments for spicy foods, and sometimes the contrast between the beer and the spiciness of the food brings out the sweetness in beers.

Something with a little fat in it, which will help calm down the spiciness. Milk is great. Lassi (a yogurt drink) is traditional with spicy Indian curries.

If it's Mexican though, I think a virgin strawberry margarita is great -- I like to have a little spiciness now and then! (If it's too hot, guacamole is the ticket.)

Milk. Unlike water, dairy products tend to neutralize the painful-but-alluring capsaicin. This is why curry is usually served with yogurt.
