CREME CHANTILLY
1 cup cream
3 tblsp sugar
1tsp vanilla.
Whip cream w/ electric mixer until it just starts to thicken.
Add sugar and vanilla
Whip to soft peaks.
This will keep in refrigerator for 24 hrs.
Whisk again just before serving.

Begin with thoroughly chilled cream.
Chill mixing bowl and beaters.
Whip the cream on medium speed, using electric hand beaters
When cream begins to form frothy peaks, start adding the sugar, (2 tablespoons to 1/4 cup granulated) a little at a time, along the sides of the bowl. Mix each bit in and continue adding to taste. If you add the sugar too soon, or too quickly, the cream will not whip up to full height.
Cream is whipped when full, soft peaks form.
For vanilla-flavored whipped cream, add 1 teaspoon of vanilla extract.
For a chocolate flavor add 2 tablespoons cocoa with 2 tablespoons of sugar.
For coffee-flavored cream add 2 teaspoons instant coffee granules and 2 tablespoons sugar.
One teaspoon to 1 tablespoon of your favorite liquor and liqueur flavors work as well.
Add all flavoring ingredients at the same time as the sugar.

For every one cup of heavy cream, add about two or three tablespoons of sugar- depending on how sweet you like whipped cream. Then, using a stand mixer, pour the cream and the sugar in to the bowl, and whip the mixture on high. you should whip it until the whipped cream forms stiff peaks and can hold its shape. if you want to hand whisk it, use a copper bowl because it helps the whipped cream form faster. If none of this works, you can just go to the store and buy some Redi Whip.

I will tell you because I made some the other day, here's my recipe:
1 pint heavy whipping cream, cold
2 tablespoons confectioner's sugar
1 tsp vanilla extract
Make sure to chill bowl and beaters along with the heavy cream. When chilled, pour the cream into the bowl. Beat at medium-high to high speed with chilled beaters until you get soft peaks (that's when you lift the beater out and some of the cream stands up to for a 'peak' but it slight falls over). Turn of the beater. At this point, add the sugar and vanilla and continue beating until it gets thicker and forms stiff peaks (stands straight up without falling).
'serve' and enjoy!

Just add a little sugar to the whipping cream and use an automatic mixer for best results. Chill your bowl for mixing.

Just beat the whipping cream with some 10x(powdered sugar) to taste until you get stiff peaks. Regular granulated white sugar will work but the 10x gives it more stability.

to whip real heavy cream, first chill the beaters and bowl, (for more volume). beat on high speed adding a little sugar and vanilla to taste. cream doubles in volume when beaten. take care not to overbeat or you will have butter. it's really a matter of taste and a recipe is not necessary. if you like how it tastes, that's all that matters.

for about 16oz of cream, just mix it either in a mixer on or with an electric hand-held mixer on high, till it starts to get thick. then add about 2 tablespoons of sugar, and about 1 teaspoon of vanilla, then taste it, and adjust if necessary. don't mix it too much or it will turn to butter, but just till peaks form when you lift the beaters out of the bowl. hope this helps.
