I read in my sociology text that over 80% of the world adheres to some type of theistic religion. Is that because 80% of people have genuinely searched for truth and found it in theism, or is it because they are just following the majority?

All of it.

Imagine a world where everybody's atheist, and one person walking around talking about the bible as if it's true (and maybe denying science just for good measure),

There is some truth to what you're saying - religions are like languages, though - some are born and some die.
But the religions that are mainstream and still around today did face the test of time. (I'm not saying that makes them true - I don't believe I'm in a position to make that assessment). So I would tend to think they have more substance than many movements who ended up being forgotten. Other religions didn't adapt too well to new discoveries and new ways of seeing the world, so that very few people today are polytheists.
I personally don't think it is very useful to follow a system of religion rigidly (as all these things undergo historical transformations) - but I think there is some value to the idea there is more to life than what is immediately obvious and that the longer-living religions probably have more substance to them than sects who come and go, just like Shakespeare has more substance and food for thought than your average Harlequin romance.

I think it would be impossible to answer that question statistically.
That is a question that every individual has to answer for himself. I can answer only for myself. I thought that the question of where does life come from and why am I here were too meaningful to
be ignored. What ever answer I found would have a huge influence on how I conducted my life. That being the case, I opened all of my mind and heart for a personal conviction that was not influenced by the opinions of others. I would recommend
that serious quest to anyone. Nothing could be more important.

It is a belief system that will be followed for many different reaons. Yes, there will be some who never questioned what they were taught by others but conversely there are some highly intelligent, scholarly believers also. Is it a phase in the evolution of spiritual belief (ie a step ahead of believing in the gods, and a step behind whatever comes next, perhaps belief in a less proscriptive deity)? Who knows, time will tell.

I don't know about you bro, but when I see a whole mess of people running down the street I'm going to believe that I should be running towards something or away from something. Credibility through numbers, my friend.

Definitely the latter. It's positively frightening how little people think for themselves.
