Sometimes you see waitresses, female food servers etc, that have sort of things that cover their hair that are sort of like scarves, but they pin them to their head and they sort of hang loose a bit down the back of the head. What's the name of these?

It's called a snood. You probably can buy one at a Beauty Supply store.
