I think that it's all about WHEN you go... during spring break and summer, there are more kids on a cruise because they are out of school. During the off months there are more adults. However, in general Carnival has more parties and is less "proper" than Royal Carribean. I have been on 2 Carnival Cruises so far and there is a good mix of all ages on both that I have been on, so you really can't go wrong.
As far as which ship to choose, you should first choose the itinerary and then see which ships go there. You can either check out Carnival's website, or go to cruisecritic.com; Carnival's website will show which ships go where and have a layout of each ship. Cruise critic will give you valuable insight as to what people actually thought of their trip from start to finish. A good thing about cruise critic is that most people that review the ships will list their age, so it helps give some perspective, which I think is what you are looking for.

Carnival IS the cruise line for people in their 20's to mid 30's and it is the party, party, party cruise line. It is a budget cruise line so fares will be cheaper than other, but so will the food and accommodations. So if that's what you want any Carnival cruise will do. Just go to their web site and shop for what you want.
Other cruise lines like Royal Caribbean and Norwegian will also have young people on them but not as many. Holland America and Princess will have an older crowd, like in their 60's and up. Also be aware that there will be more people going to CAribbean cruises than to places like Panama, Baltic, Mediterranian or even Alaska. Cruises to these places are more historic and sightseeing, rather than the fun water sports and beach activities of the Caribbean. So look at/pay attention to destination also.
