Because in banana bread (which is a cakey batter) you need a leavening agent (rising power) like baking powder or baking soda....Yeast is also a leavening agent mainly used in more doughy items like white bread or cinnamon buns.

Because it's not really a bread. It's more like a big muffin. Think of it that way. It doesn't need to rise.
