Probably a medium colored skin. I say this because they probably had a mixture of the dominant and recessive genes that determine skin color.
Someone that has all dominant genes are very dark (black). Someone that has all recessive genes are very light (white).
If both Adam and Eve had some dominant and some recessive, most of their children would have been a medium color, but some would have gotten a dominant set of genes from their father and a dominant set of genes from their mother, making them very dark skinned. Likewise some children would have gotten recessive genes from both parents, making them light skinned.
If then some of the people who looked alike began to congrigate together and migrate to another region, they would have developed into a race of like-colored people. For example, if a very dark skin person had children with another very dark skin person, they could only produce dark skinned children since both parents would have only the dominant genes that determine skin color.
This would explain how we have so many races of people when all satrted from Adam and Eve.

Because people want everything in the Bible to fit their culture.
"Abraham? OH he was a white man with an American accent" etc, though I don't really think people think that way.
Adam and Eve were probably tan or olive skinned since the Garden of Eden was in Iraq. They weren't OJ Simpson black, they weren't Brad Pitt white.

They were mulattoes. There is a lot of people who are mixed races. They have the ability to have both black and white children.
In fact, I knew a couple and one son was dark and the other was white. They were brother's.
Adaptation caused the races to be so different as tribes moved away from each other. In the beginning they looked more alike than they do today.

The Bible never states what color Adam and Eve were, but I am sure they were beautiful and of the words above-unique! I am sure the Bible doesn't say what color exactly because it doesn't matter. God is not partial, he created A and E with the genetics to pass on a great variety of beauty.

Brown. Duh. Look at the people from that region now, most of them are BROWN. And I don't mean the Jewish people who decided to return to Israel after a few thousand years in Europe. I mean the people FROM Mesopotamia.
But they COULD be black and white mix because they were created directly by God. he could've made them whatever he wanted. Adam Black. Eve White. Vice versa. Both brown. Or purple...

According to Evangelical Creationists, they were a greyish brown color, like molded poo.
and as the people started spreading around the globe in only a few thousand years people changed all kinds of colors and physical features.
Amazing leap of faith, isn't it?

Adam and Eve had no reference to color. They were put together for Adam's companionship and to start nations of all men. God's gift to Adam - Eve.

The story of Adam and Eve is symbolic, not literal.
Genesis is the symbolic testimony of humanity's fall from heaven and paradise lost.
