Banana Bread
A good breakfast bread, or for snacking on anytime.
Cream together:
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla
Add
3 large or 4 small ripe bananas, mashed.
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
May add 1 cup chopped nuts, if desired.
Mix well and pour into a greased bread tin.
Bake 325° F oven for 55-60 minutes.
Recipe may be doubled, or more, easily.
Bread freezes well.

One-Pan Banana Nut Bread
1/3 c vegetable oil
1 ½ c mashed bananas
½ tsp vanilla
2 1/3 c Bisquick
1 c sugar
Preheat oven to 350 degrees. Beat all ingredients together vigorously. Pour into well greased loaf pan. Bake 55 to 60 minutes. Turn out on rack to cool.
[If you don’t have ripe bananas, place 2 or 3 bananas in the freezer. They will turn black after a day or so. This means the sugars have developed. Remove and defrost- they will probably be a bit mushy. Use them in this recipe.]

I don't like lengthy recipes. Simple ones are just as tasty.
Here's one called:
Kona Banana Bread
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed banana
1 1/4 c. sifted flour
3/4 t. baking soda
1/2 t. salt
Cream shortening and sugar until light. Add eggs, one at a time, beating well after each. Stir in banana. Sift together dry ingredients; add to banana mixture. Mix till well blended. Pour into greased 9x9x2 inch pan. Bake at 350 degrees 30 to 35 minutes. Cut in squares.
Short. Sweet. Simple. Yummy.

This is the one I use:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

VERY BANANA BREAD
1/2 cup butter, room temperature
1 1/3 cup sugar
2 eggs
2 tsp. Myer's rum banana liquor
1/4 cup banana yogurt (Banilla) or buttermilk
1 tsp. banana, almond or vanilla extract
2 cups flour, sifted
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup ripe bananas, mashed
In the bowl of an electric mixer, cream together butter and sugar until it becomes light and fluffy. Add eggs, one at a time, beating after each addition. Continue to beat until fluffy and light.
Combine liquor and extracts. Sift the dry ingredients together and add half to batter. Add buttermilk or yogurt, extract and liquor, then remaining dry ingredients. Add mashed bananas and beat one minute longer.
Grease and flour several loaf pans.
Bake at 350F degrees until toothpick inserted in center comes out clean.
