Well over a year ago, my hubby came home from the grocery, proudly holding out a 64 oz. bottle of Heinz Ketchup that he got on "a great sale!" I've been living with this monstrosity in my fridge ever since. I know it's not that expensive, but I've been stubbornly determined not to waste it. It's holding my refrigerator hostage. Help me.

Anybody got GOOD recipes that use a lot of ketchup? I'd prefer some that you've actually tried, if possible.

INGREDIENTS:
1 cup ketchup
1/4 cup fresh key lime juice or Persian lime juice
2 Tbsp liquid smoke
1 Tbsp Worcestershire sauce
1 Tbsp balsamic vinegar
2 Tbsp brown sugar, packed
1 tsp hot pepper sauce, or to taste
1 tsp granulated garlic powder
1/4 cup minced sweet onion
4 pounds meaty chicken wing pieces, joints separated and tips discarded (or save tips for making stock), about 24 pieces
PREPARATION:
Marinade:
In a small bowl, combine ketchup, key lime juice, liquid smoke, Worcestershire sauce, balsamic vinegar, brown sugar, hot pepper sauce, garlic powder, and sweet onion.

Stir until well-combined. (Yields about 1-1/2 cups of marinade.)

Place chicken wing pieces into a large freezer zip-top bag. Pour in the marinade, squeeze out the air, and seal. Turn bag over and over until chicken wings are coated with the marinade. Refrigerate at least two hours or overnight.

Spray the well of the Crock-Pot BBQ-Pit® with cooking oil spray. Place roasting rack in well. Remove chicken wing pieces from marinade, reserving marinade, and place in a single layer on the roasting rack. Set the Crock-Pot BBQ-Pit® temperature control to High. Cook 2 to 2-1/2 hours.

While chicken wings are cooking, bring reserved marinade to a boil in a small saucepan. Let boil for five minutes. Thirty minutes before wings are done, baste chicken wings with boiled marinade sauce, and continue cooking until wings are tender.

Yield: 8 appetizer or 3 entree servings

Oven-bake Method:
Marinate per above instructions. Preheat oven to 325 F. Place wings on a baking rack nestled inside a baking pan. Bake about 1-1/2 hours, basting with boiled marinade sauce during the last half hour.

You could make some good old fashioned baked beans--it uses quite a bit of ketchup. Here is how I make them: Cook 1/2 pound of bacon (chopped) with a chopped onion and a chopped green pepper until the bacon is crispy and the veggies are tender. Add in 2 cloves of minced garlic and pour in 3 cans (15 oz. size) of any brand pork and beans, undrained. Add about 1/3 cup of brown sugar (add more later if you like sweeter beans), a squirt of yellow mustard, and about a teaspoon of worcestershire sauce. Add about a cup of ketchup, or more, depending on how saucy you want. These beans are great, but my secret ingredient is a couple dashes of Tabasco sauce.

Another way to use up some ketchup is to make homemade french fries with fry sauce. Use equal parts of mayonnaise and ketchup to make the fry sauce. A lot of people have never heard of fry sauce, but here in Utah where I live, it's served in almost all the restaurants, even McDonalds.

You could also make Thousand Island dressing:

1/2 cup mayonnaise
2 teaspoons evaporated milk
1/4 cup plus 2 tablespoons ketchup
1 teaspoon Worcestershire sauce
1 teaspoon garlic powder
2 dill pickle spears, chopped.

Mix all together and chill.

Poor Man's Spagetti


Dice some bacon and fry it up.
Dice some onion and fry it up.
Boil spagetti noodles
Open a small can of sliced mushrooms

Mix cooked spagetti with bacon, onion, mushrooms. Add some powdered garlic. Not a lot. Add some ketchup. Stir. Don't add too much ketchup. Just enough to coat the spagetti. Add one teaspoon of sugar. Stir. and eat.

Here is my husband's favorite salad and dressing, which lasts forever!

Crunchy Spinach Salad

Salad:
2 qt spinach
2 C sprouts
1 can water chestnuts
4 hard boiled eggs
6 strips bacon
1 small onion

Dressing:
½ C brown sugar
½ C vegetable oil
1/3 C vinegar
1/3 C ketchup
1 T worcestershire

the only way to make meatloaf is with tons of ketchup mixed in
hamburger, eggs, milk, bread crumbs, dry onion soup mix and enough ketchup to mix it all together.
Or you could just cut your losses and toss the whole thing into the trash the next time you clean the fridge! A year is plenty of time for it to live with you.
