Mama’s Spaghetti and Meatball Sauce
The trick to this recipe, as in most Italian cooking is to use the best ingredients you can find. The choice of meat is up to you, but I try to add a piece of both sparerib, and beef to the sauce, and prefer a combination of beef and veal, or beef and turkey for the meatballs. Here is the recipe;
For The Sauce:
2 Tbsp. Olive Oil
2 Cloves of Garlic, Minced
1 Small Onion, Chopped Fine
1 Stalk of Celery, Finely Chopped
2 or 3 Small Pieces of Meat (Pork, Beef, or Chicken)
Salt & Pepper
1/4 Cup Chopped Basil
1/2 Tbsp. Dried Oregano
1/2 Tbsp. Dried Thyme
1/4 Cup Chopped Fresh Parsley
Dash of Red Pepper Flakes (Optional)
2 (6oz) Cans Tomato Paste
1 (26 oz. can/box) Pureed Tomatoes
About 5 Cups water
3 Tbsp. Grated Parmesan Cheese
1 Pound Of Spaghetti or Pasta of Choice
Brown the meat pieces in the oil until well browned. Add the garlic, onion, and celery and sauté until tender. Add the paste, tomatoes, water and herbs, and bring to a boil. Season with salt and pepper to your own personal taste. Turn mixture down to a simmer, then drop the prepared meatballs into the sauce. Do not stir for the first 15 minutes or so until the meatballs begin to firm up.
Continue to cook for 2-3 hours, stirring occasionally, and adding extra water as needed if the sauce becomes too thick. This sauce, with or without the meatballs can now be used over your pasta of choice. Just before serving, stir the 3 Tbsp. of grated cheese into the sauce. Though most people would choose spaghetti, personally I prefer rigatoni or penne. Serve over pasta cooked al dente, and offer a little more parmesan cheese at the table. With the addition of a nice mixed salad and some crusty Italian bread, this pasta dish would easily make a complete meal. I would choose a robust Chianti wine to accompany this meal.
Meatballs:
1 lb. Ground Beef
1/2 lb. Ground Pork or Veal
Salt & Pepper
1 or 2 Cloves Garlic, Minced
2 Tbsp. Fresh Chopped Parsley
2 Tbsp. Grated Parmesan Cheese
1 Egg
1 Cup Soft Bread Crumbs
1/2 Cup Water
Add the bread crumbs to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.
Buon Appetito!

A really easy stir fry, satisfies that taste for asian cooking at home. For a really fast meal you can make this with frozen vegetables. It's just a good with beef or chicken. The method can be used for any combination that you desire. Add nuts, seafood, lamb, mushrooms, water chestnuts, whatever you like! — You can use portabella mushrooms or tofu in place of the meat for a vegetarian treat. A great opportunity to clean out the veggie drawer.
For the Marinade
1/2 cup soy sauce
2 tablespoons honey
6 cloves minced/crushed garlic or 1 tablespoon garlic powder
2 tablespoons sesame oil
2 tablespoons peanut oil or safflower oil
For the Stirfry
1/2-1 lb top round steaks, cut about 3/16 " thick across the bias (or similar lean cut, sirloin, flank, chicken breast, thighs, boneless pork chops, tofu, shrimp, port)
1 1/2 cups snow peas
1 cup carrots, cut up about the size of the snow peas
1/2 cup onions, cut up about the size of the snow peas
1 teaspoon sesame oil
1/4 cup water, for veggies
2 teaspoons cornstarch, mixed in water
1/4 cup of cold water
this is my famous recipe... Enjoy!!!

You can make mexican lasagna... I personally make it with ground turkey, but it's a real versatile recipe. All you need are tortillas, cheese --your favorite, canned tomatoes, corn, re-fried beans, chili powder, cumin, and salt. Just brown the meat with a little olive oil or what ever oil you like, season it with your spices to taste. Then add the onions, tomatoes, corn kernels & beans. Let it heat through, if it is too liquidy just keep cooking on low heat until the mixture thickens. Then in a microwave or oven safe pan build it as you would a lasagna. Cut the tortillas to make one layer then put a layer of mixture and a layer of cheese, I usally do 3 layers. The mixture is already all cooked, you only need to put it in the microwave or oven to heat the tortillas and melt the cheese.
This is one of my husband's favorite, he always wants me to make it when we have friends over and he's always talking about it with his friends.

A meatloaf freezes nicely already made and is always a family favorite in this house.
You can also make plain old hamburgers and freeze them.
Or maybe you can make meatballs for a spaghetti dinner down the line.

I like to make "hobo joe's" & freeze them. Take & pat out 4 good size hamburger patties. Place in center of double piece of foil. Cut up potatos, mushrooms, carrots & onions, then pour over 1 tsp of worchester and A-1 sauce & seal all tightly into foil packet. Place packets in freezer bags & freeze til ready to cook. Place on counter for 1 hour, then bake @ 375 for 1 hour til done....

nicely it relies upon on what the fat content fabric of the floor beef is. If its basically 5% then I bypass away it in yet while its 15% or extra I drain a number of it. It makes the chili too greasy with extra fat.
