This is something I threw together when my boyfriend's mother was coming over for dinner. It was a big hit.
I don't have exact amounts or cooking times, and you could use whatever vegetables you like or have on hand.
Cook up some linguine, fettuccine, or another flat noodle.
In a large skillet, melt a tablespoon or so of butter, and throw in a minced clove of garlic and about half of a red onion, coarsely chopped. Add a small package of the uncooked kind of smoked salmon, cut into bite-sized pieces. When that starts to get cooked, add some red and yellow bell pepper. When the salmon is cooked, and the veggies are tender, throw in some grape tomatoes, cut in half, and plenty of coarsely chopped fresh basil and parsley. When the herbs are a little wilted, drizzle it all with lemon juice, season it with a little black pepper, and toss in your pasta. I served it sprinkled with grated romano cheese. It was tasty.

Here is the quickest Manicotti recipe ever: Boil a box of manicotti noodles until not quite done. Stuff each shell with a string cheese. Place in a baking dish and pour spaghetti sauce over the top and top with some grated Parmesan cheese. Bake at 350 for about 15 minutes until the cheese is melted. This is so yummy and quick. I like the traditional manicotti with ricotta cheese better, but when I am in a hurry, this recipe is great. Hope this helps!

If you want to eat truly healthy, lose body fat consistently, normalize your blood pressure, cholesterol levels, prevent cancer, and even boost your brain health and energy levels, you may have heard all over the news that the Paleo Diet has been found to be one of the best methods of achieving all of these benefits compared to any other popular "fad" diets out there. Go here https://bitly.im/aMEA5
The truth is that the Paleo Diet will never be considered a fad because it's just simply the way that humans evolved to eat over approximately 2 million years. And eating in a similar fashion to our ancestors has been proven time and time again to offer amazing health benefits, including prevention of most diseases of civilization such as cancer, heart disease, alzheimers, and other chronic conditions that are mostly caused by poor diet and lifestyle. One of the biggest misunderstandings about the Paleo Diet is that it's a meat-eating diet, or a super low-carb diet. This is not true

You can always buy some grilled chicken and pesto, put the grilled chicken and some pesto in with the noodles and toss.
You can also try a pasta salad. Buy a jar of roasted peppers, cut them up, cut up raw zuccini, add in olives, olive oil, white balsamic vinegar, small mini mozzeral balls, cut up basil and throw that in there, add a little pepper to taste. Mix it all together, you can also had little tomatoes or cucumbers or anything you want.

Here are a few topping or sauces you can use with any kind of pasta you want to use (linguine, farafalle (bowtie shape) spaghetti, rigatoni (tubes), penne (tubes cut at a slant), tagliatelle (long wide noodles) or fuscilli (corkscrew).
Brown butter with Mizithra cheese:
-Take 1 stick of butter, melt it in a saucepan on low, stir it so it won't burn, continue to let it melt & cook until it starts turning a light brown, turn off the heat immediately to prevent burning. Toss w/ cooked pasta and sprinkle with a generous amount of Mizithra (Greek style) cheese. If you can't find this kind of cheese...use a grated pecorino romano cheese. Add in sea salt & fresh cracked pepper to taste. This one is so simple & good. I promise.
Marinara with Spicey Italian Sausage & Roasted Garlic
-Cook up a batch of your fav. marinara sauce (or use a jar sauce if you're really in a hurry)set aside and keep it on low heat. In a skillet, brown up some Spicey Italian sausage (remove the outside casing of the sausage before browning it) chop it up while it cooks. Add in 2-3 cloves of sliced garlic & 1/2 tsp. of red chili flakes & 1/2 C. of chopped sundried tomatoes (presoftened in olive oil & warm water). When everything gets heated through, toss in you choice of cooked pasta. Garnish with chopped flat leaf Italian parsley & a few more chile flakes if so desired.
Pesto Sauce with Pine Nuts & Prosciutto Ham
-Take your fav. pesto sauce (NOT creamy pesto sauce though as it's too rich with all of the other ingredients) and add in TOASTED pine nuts (just take a small pan and add in about 3 - 4 T. of pine nuts and stir on low/med. heat until nicely browned) Take a few slices of prosciutto ham (they have thinly presliced proscuitto ham pre-packaged in the deli section...if not some Canadian or Black Forest ham works fine) cut into thin ribbon slices and quickly saute' until browned then add in the pesto, pinenuts & your fav. cooked pasta. Garnish with a few whole basil leaves & a few of the pine nuts. You can also serve up slices of grilled chicken breast on the side.
