When I am stressed I refuse to give it up to my b/f but sometimes, like after my gymnastics meets, I am willing to.
Is it too harsh to make him wait until I am not so stressed??

No, it is not selfish. Ultimately, the act should be something that both of you enjoy. You are not in service to him. If he cares about you he will understand that there are times when you may not feel like doing it. Everyone has different need and drives so if you are not in the right frame of mind, don't force yourself. I am sure you wouldn't want him to give it up when he doesn't want to simply to please you. That would be selfish.

Did you know that extended exercise releases the same endorphines that are released through sex? That COULD be why you are more willing after gym. Sex and exercise are BOTH stress busters :)

You're asking us that question?
If you don't know how you feel about that, then you probably shouldn't be involved in a sexual relationship. You aren't ready.
