Are you talking about chicken here???? As a general rule,you want more of the good stuff and less of the bad stuff, so, think, less salt and more flavorful herbs, less grease, and more succulent meat. Red pepper is hotter than black pepper so use a combination of both in moderation. Baked is preferred to fried, but on those days that you simply must, use a good oil such as cannola and drain well. Infuse your meat with a good marinade so that you'll have to put less on it. For a great chicken recipe:

Boneless skinless chicken breasts and thighs
Light Italian salad dressing
Italian bread crumbs
grated parmesan cheese
margarine

Marinate chicken over night in salad dressing. Drain thoroughly. Blend bread crumbs tihe parmesan cheese and dredge chicken through it, coating both sides. Place on a baking sheet in a single layer and dot with margarine. Bake uncovered for 45 minutes, or until crispy and cooked through. YUM!

Extra crispy. You can peel and discard the skin, thus eliminating most of the salt and fat.
