A favorite of mine
Beef Chuck (the better quality of meat, the better the dish!) cut into strips
Marinate the beef strips in Soy Sauce & freshly grated ginger & fresh minced garlic and some black pepper overnite.
Heat oil in a wok (or just a frying pan)
Add beef and stir until cooked to your preference.
Just before you finish add fresh green bell pepper (also cut into strips) and fresh cut onions (also strips), until veggies are tender. Use any variation of veggies that you prefer.
Mix 1-2 tablespoons of corn starch in a cup of COLD water. Stir until completely liquidy. Add to pan, stir, cover and leave on a low heat until the sauce thickens. Enjoy!

This stir fry is great with chicken, but it would be fabulous with strips of beef, too!
Thai Peanut Chicken
Makes 4 servings.
3 tablespoons soy sauce
2 tablespoons creamy peanut butter
2 teaspoons rice vinegar
1/4 teaspoon cayenne pepper
2 tablespoons olive oil
2 skinless, boneless chicken breast halves - cut into thin strips
4 tablespoons chopped garlic
2 tablespoons chopped fresh ginger root
2 cup sliced mushrooms
1/2 cup chopped green onions
4 broccoli florets
2 cups snap peas
chopped peanuts - garnish
Directions
1. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.
2. Heat oil in a skillet or wok over high heat. Add chicken, garlic and ginger, mushrooms and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes.
3. Reduce heat to medium, and add green onion, broccoli, peanuts, and the peanut butter mixture. Cook, stirring frequently, for 5 minutes, or until veggies are tender, and chicken is cooked through. Serve over brown rice.

Beef and Broccoli Stir-Fry
The key to success with any type of stir-fry, is to have the ingredients prepped and ready before the cooking begins. Don’t overcook the vegetables as they will become more tender when the dish is reheated in the microwave.
Makes 4 servings
Ingredients:
8 ounces top sirloin, cut into 1/4-inch-thick strips
3 tablespoons soy sauce
1 tablespoon Sherry
1 tablespoon brown sugar
1 tablespoon oriental sesame oil
3 large garlic cloves, minced
1 2-inch piece fresh ginger, peeled, minced (or 1 teaspoon ginger powder)
2 cups broccoli florets
1 tablespoon peanut or vegetable oil
2 cups Chinese pea pods, trimmed
6 green onions, cut into 1-inch-long pieces
1/2 red bell pepper, sliced
1 teaspoon cornstarch
Preparation:
Combine beef with next 6 ingredients to make marinade.
Cook broccoli in small pot of boiling salted water until almost crisp-tender, about 2 minutes, drain. Rinse under cold water to cool.
Heat oil in wok or heavy large skillet over high heat. Using slotted spoon, transfer beef to wok, reserving marinade.
Stir-fry beef until just browned, about 2 minutes. Remove beef from wok.
Add broccoli, pea pods, green onions and red bell pepper. Continue stir-frying until vegetables are just crisp-tender, about 3 minutes.
Stir cornstarch into reserved marinade. Pour marinade over vegetables in wok. Add beef and stir-fry until liquid boils and thickens, about 1 minute.
Serve over bed of instant rice.
