How about Ebola ? An entire book was written about it--"The Hot Zone", I believe the author is Richard Preston. You can find more on google, and in Wikipedia. Ebola turns the insides of a human to hemorrhaging mush. It is 50-75% fatal, depending on the strain.

Cholera. You literally fall apart. Still no cure for it. Another one is this strain of virus in the Amazon Jungle where it turns your skin to liquid. You literally drip away. And that's one they know about! Leprosy still is around also.
