Other than transpiration, plant cells go through aerobic respiration (like animals) to produce energy. This gives off water. The general equation for aerobic respiration is:

Sugar + Oxygen = Carbon Dioxide + Water + Energy

Respiration occurs in the mitochondria.

Water vapor escapes through the tiny stomata on the leaves. This escape is called transpiration. Water vapor going out of the leaves like this pulls more water up through the xylem to the leaves.

Water vapor escapes because the stomata have to be open in order for the plant to get CO2 for photosynthesis (and release oxygen gas that results from photosynthesis).
