If God created Humans in His image what image was that?
We are so diverse in appearance with color, individual characteristics etc. The only common denominators are 2 arms 2 legs a head and torso. So I throw that theory out the window!
God has become stereotyped and often misrepresented by the image of the Prohet Jesus. Man has to have a belief system in order to explain the unexplainable, like what was here before the universe ?
If we ever did intelligent life elsewhere, the concept of God is exploded into the myth it really is. Religions have many times tried to suppress translations of text from old manuscripts and even the Rosetta stone, because some of the writings exposed them for the lying charlatans they are.
This is history, the chuch plotted to murder the french man who succeeded in translating the Rosetta. It denied many of the accepted teachings and put egg on the face of the church.
There is so much we don't understand, and it's easy to invent an all powerful Deity to help us cope with life's mysteries. This is not nescessarily a bad thing, but it is nonetheless self deception to belive there really is a God. How could an omnipotent all powerful God take 40 days and 40 nights to write 10 commandments on stone tablets to give to Moses.
One would think that lightning bolts sent to destroy Soddom and Gommora, Plagues to decimate Egypt, Part the waters of the Red sea in Seconds Speak in booming tones through burning bushes could have some faster method of carving several lines of text onto stone! All fables my friend
Now watch the die hard Christians thumb this answer down.

In the bible, it says something to the affect of 'God created man in his image". this leads me to believe that God has the appearance of a human being, but is not actually human.
If God were actually a human I'm pretty sure he/she/it wouldn't be able to create an entire universe

Well, human beings are not omniscient, omnipotent...omni anything really.
If we knew what God was...and that God's existence is credible, trust me, wouldn't we all believe? Personally, all God is, is the name given to how this universe was created. Therefore, God (how the universe originated) remains a mystery.

If adam was made in god's likeness, like the bible says, then he is a "perfected human being." When god appears to people, according to the bible, the humans (mortals) must be transfigured to endure his presence (moses, others who met god). This means that he is a transfigured, perfected human being.

If you are Christian, you believe God assumed human form at some point. Many other religions have the same belief.
Catholics and Orthodox believe Jesus is 100% human, and also 100% God. One of the paradoxes of the faith.
Many Churches spilt from orthodoxy on this question. The Coptic Orthodox Church, for example, rejected Christ's humanity. (I think)
If you are Christian, it depends on what flavor of Christian you are. Probably, you are supposed to believe that Jesus is God and that he is human, too.

No. but God the word (the second part of the Godhead) did leave His place in heaven to be born a human, live a sinless life, die for those who would receive Him. And to all who do He gives eternal life in heaven. Isnt it great that He gives us the choice !
