Cake mix - any kind, mixed to batter per directions
can of fruit pie filling
bag of mini marshmallows
9 x 13 pan.
Spray pan with non-stick spray
Line bottom with marshmallows - 1 layer.
pour cake batter across marshmallows
spoon fruit topping over that
Bake 350 degrees until marshmallows are brown.
fruit will sink to the bottom, marshmallows float to the top and melt. Try chocolate cake with cherry pie filling, or vanilla with blueberry or pineapple.

The BEST banana pudding recipe EVER!
You'll need:
1 Can sweetened condensed milk, one small container heavy cream, 1 pack Jell-o instant vanilla pudding, about 3 bananas and a box of Nilla wafers.
Directions:
Blend the pudding mix with the sweetened condensed milk and one can (use the milk can) of water. Set in refrigerator while you whip the heavy cream into a light fluff (like whipped cream). Fold the cream into the pudding. Layer pudding then wafers then thin slices of bananas until you have about three layers.You can let it chill, but it's good to go right after you're done layering!

Apple Cranberry Crisp -
Topping:
16 gingersnaps
1 cup low fat granola
Filling:
2 - 21 oz. cans of apple pie filling
1 cup dried cranberries
1 tbsp grated lemon zest (I never have on hand so I just add a little lemon juice.)
Heat oven to 375 degrees. Coat shallow 1 & 1/2 qt baking dish with non-stick spray.
Topping: Crush cookies in large plastic bag with rolling pin until coarse crumbs form (about 1 cup). Add granola - shake to mix.
Filling: Stir ingredients in large bowl until well blended. Spoon evenly into baking dish than sprinkle with topping.
Bake uncovered for 30 minutes or until edges buble & topping is golden. Serve warm or at room temp - great w/ vanilla ice cream.

Microwave baked apples
Cut peel and core 1 apple for each person. Cut into wedges. Place in microwave safe dish. Cut a pat or two of butter or margarine for each apple. Sprinkle liberal amount of brown sugar on top of apples. Sprinkle a little cinnamon on top of that. Cover and microwave approximately 1 1/2 minutes per apple added.

a.) 1 1/2 cups of cream and 1 t. vanilla extract, put in sauce pan and heat- don't boil. Remove from heat.
b.) Quickly put in chocolate chips and whisk till melted.
c.) Put in 5-6 ramekins or small shot glasses or demitasse cups and chill in fridge!
Optional: serve with a dollop of chilled cream.
For a subtle change in flavor from time to time: substitute vanilla extract with 1 T rum or 1 t almond extract.

Makes:8 servings
4 egg yolks
1/4 cup sugar
1 cup whipping (heavy) cream
1 cup white baking chips
1 1/2 cups whipping (heavy) cream
Chocolate curls, if desired
1. Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar.
2. Heat 1 cup whipping cream in 2-quart saucepan over medium heat just until hot. Gradually stir at least half of the cream into egg yolk mixture, then stir back into hot cream in saucepan. Cook over low heat about 5 minutes, stirring constantly, until mixture thickens (do not boil).
3. Stir in baking chips until melted. Cover and refrigerate about 2 hours, stirring occasionally, just until chilled.
4. Beat 1 1/2 cups whipping cream in chilled medium bowl with electric mixer on high speed until stiff. Fold refrigerated mixture into whipped cream. Spoon mixture into parfait or wine glasses. Garnish with chocolate curls. Store covered in refrigerator.
