I read instructions for makign a ginger beer plant and it says to make it in a sealed container. well i am using a wonton soup container with a water tight and thus an airtight seal. the instructions say to make the plant in a covered jug... is it supposed to be sealed or merely covered? I covered it and the top popped off... wouldnt the solution become carbonated and since co2 is acidic wouldnt it kill the yeast?!?!?!

The solution will become carbonated if you keep the lid on it. The yeast are creating the co2 so they are happy little critters. I just started brewing ginger beer from the plant also. My first batch was great.. waiting on the second batch to do it's thing. Tastes great and very little alcohol the way I brewed it.

I kept it on a heating pad to speed up the growing.

make plant in large jugs cover but each week halve the plant throw excess away.
