He will be 1 in a week, he says momma ALL the time. He says dada and hi, hey.

What can I do to encourage him to speak more? I am a stay at home mom, he has my attention all day except when he naps!

What sort of activities can I do or should I be doing with him?

The best way is to talk to him. Just your entire day, narrate it. Even ask questions and pause for answers. Also do not give into every want he does with a grunt, encourage him to try and ask for it. If his or her every want is satisfied with a mamma, then he has no reason to say anything more.

Some kids just don't talk much. My first child talked herself silly at a year! My son said barely 15 words by the time he was 3. I was concerned. People would always say that his sister spoke for him and she didn't.
He eventually grew out of it; if its any consolation, he is 6 now and rarely shuts up.

The best way to get him to talk more is to talk and read to him. However no matter how much talking or reading you do until he is psychologically ready and his brain is developed enough he will not speak more then he currently is. Think about it like this you've been talking to him 12 months and all he says is 4 words it takes them awhile for their brain to be mature enough
