Im going to try a recipe of corned beef, spring onion, red pepper mashed potato and seasoning all shaped and pan fried in patties. My fella said chips but i think chips or wedges would be too much potato for one meal. I would have also said eggs or baked beans but my fella does not like either of those. I suggested sweetcorn relish but he didnt fancy that either. Any ideas?

If you're looking for a more balanced meal, then try a salad of baby spinach, feta cheese, mandarin oranges, crumbled bacon and Catalina dressing. Since the potatoe cakes will be savory, you might want to do something with a sweet touch to it. The above salad has it. Also, fresh fruit and, for those craving carbs, try buttermilk biscuits with honey butter or croissants.

If it's leftover corned beef and cabbage from the day before add all the veggies (like potatoes and carrots and turnips- thats what I make with my corned beef), and meat in a deep skillet and cook on the stove top. It tastes amazing! Only thing better than fresh corned beef is the leftovers the next day!!

U can serve it with a fresh salad.
And a dip.
I use 4 tbsp mayonnaise + 4 tbsp worcestershire sauce+ 3 tbsp chilli garlic sauce.Bend and ur dip is ready. It is really yummy.

A nice salad and some fresh veggies will round it out into a meal.
If its more of a breakfast thing you are looking for, some eggs your favorite way will also be good. with some nice bread.

Poached eggs, runny in the center; yolk soaks into the hash when cut up.

I would serve a salad with mixed greens with it...which is what I serve with salmon cakes or corn fritters or similar...

I think it would go good with rice. Unless of course he doesnt like rice either. It could be the side dish.
