If you're looking for a more balanced meal, then try a salad of baby spinach, feta cheese, mandarin oranges, crumbled bacon and Catalina dressing. Since the potatoe cakes will be savory, you might want to do something with a sweet touch to it. The above salad has it. If it's leftover corned beef and cabbage from the day before add all the veggies (like potatoes and carrots and turnips- thats what I make with my corned beef), and meat in a deep skillet and cook on the stove top. It tastes amazing! Only thing better than fresh corned beef is the leftovers the next day!!

U can serve it with a fresh salad.
And a dip.
I use 4 tbsp mayonnaise + 4 tbsp worcestershire sauce+ 3 tbsp chilli garlic sauce.Bend and ur dip is ready. It is really yummy.

A nice salad and some fresh veggies will round it out into a meal.
If its more of a breakfast thing you are looking for, some eggs your favorite way will also be good. with some nice bread.
