You might need to check what the power draw is on the camera. Does the video fail after the IR kick on? If so you might now have enough power going to the camera. Also, good to check the connectors like the other people have stated. If it still doesn't work you can get a good cheap replacement from Security Cameras Direct.

Check your audio/video connections. It sounds like a loose or faulty cable. If you need to, disconnect everything, clean off the connections, and reconnect the wires.

I'll check back in to see if that helped at all. Unless the screen is pure white, it's not likely a heat source. And,uh, NO, clear plastic covering the lens will NOT interfere with the camera. What do you think the IR leds are protected with, magic pixie dust? LOL

Where is the camera located? if it near any heat source (light bulb, dryer duct) you may be overdriving the image and all it can see is the heat. If that is not it, check the connections you may have a loose wire, also check to make sure nothing is blocking the camera (as whomever you got the camera to spy on may have noticed and covered it. Even a clear plastic film will render an infrared camera useless

Might help at night to hook up some infrared lights outside. Correct me if I am wrong but I do believe thats how Disney can see you in the dark and you cant see the light.
