I want to cook a steak now and again to go with something like green vegetables and mash. All I can afford are the big, thin frying steaks that are around £2/3 pounds at the butchers.

I cooked one once before and fried it. But now I am more health conscious; is there another way you can cook this type of steak?

Frying in itself is NOT unhealthy. It's the oils and fats that people add that make it unhealthy.

You can broil or grill meats, but a fast-fry steak like the one you've described will cook very quickly and potentially burn using these methods.

I would suggest you fast-fry it without any added oils or butter in a non-stick pan with garlic, onions and mushrooms.

The very best way: Choose a loin steak, cut 3/4 to 1 inch thick. Set a hardwood charcoal fire going in an outdoor grill. Pre-arrange the grill so that the meat will be 1-1/2 to 2 inches above the coals. Soon as you light the charcoal, come inside and pat your steak dry. Check after about 5 minutes, and then every minute or to after, until you're satisfied with the shade of doneness on the coals side of the meat. Flip it and cook the other side the same way. Meat is done when you can stick it with a fork or a knife tip and the juices don't run pink. TAKE CARE NOT TO OVERCOOK !! If you've started with a good grade of meat, you will scarcely need a knife to cut your steak.

With this cut you should -

a. tenderise well using a mallet (or a rolling pin will do but be careful not to 'mash' it)

b. flash fry in a very hot pan (only a little, healthy, olive oil needed) for one minute on each side - or stir fry in a very hot wok.

This is the best way to avoid chewing leather.

Why not get a braising steak (similar price and more tasty in my opinion)? Seal both sides in a hot pan, then turn the heat down add a little water and onions and slow cook for about 30 minutes with the lid on the pan. Really tender and just as good value for money.

Well since the steak is so thin and not a very good cut it will be difficult to cook it and have it taste good with out frying it.
Your best bet is to grill or broil and make sure to tenderize it really well before hand. Try looking for a sirloin cut ...its cheap but they come thick so you will have more options. The fat content is what makes frying not so healthy. get a frying pan extremely hot( non stick is best) coat the pan in salt.(1/2 teaspoon) and then add the steak. flip it and it should be pretty good. That will eliminate having to use oil at all.

There's some really great answers on here. Thanks everyone...I might have to try a few of these.

I personally have been using the Foreman Grill for almost 9 years now. I've gone through 3 grills already because we use it so much. If you don't keep it on the grill for too long you can get it to be nice and juicy, it's quite tastey. I've only ever done these kind of steaks on it because it's all we can afford too and I'm happy with the way they turn out. =)

You can get a small Foreman pretty much now a days and they're not that expensive anymore.

Put the steak on aluminum foil. Sprinkle it with salt and pepper to taste. Cover with bar b q sauce and add half stick of butter. Wrap steak up tightly and seal edges well. Place the steak on a cookie sheet and bake for about an hour at 350. This is also a good way to cook these steaks in an open fire. Yum!

If you are worried about the butter - use the "I can't believe it's not butter" spray. No fat ENJOY

You can put the meat in a VERY hot ungreased pan, when one side is browned (happens very fast), turn and quickly brown the other side. You can throw in some chopped onions or mushrooms now. Cover the pan tightly and turn off the heat.

Depending on how done you like you meat, it will become good in a short while.

Because you are not adding any oils, but the meat is cooking in it's own juices, it will be flavorful and not as unhealthy as "frying" it in any kind of oil.

I don't know if I use the same type of steak and i am not sure if it is healthy but here goes. I put butter in a skillet and melt it. Put the steak in and cook on both sides until desired temp. as you are cooking put favorite seasons on it. I like lemon pepper (usually used for chicken).

Use a health grill like George Foreman - gets rid of any fat but can make it quite dry. I quite like how it cooks lines onto the outside, if only for aesthetics. Works better on thicker steaks.
