We have made pancakes, waffles, french toast, eggs, bacon, omlettes, fritattas, eggs bennidict...what else can we make that is creative and really really good?

One of the best ways to have a fabulous new breakfast is to spice up old standards! Some of my favourites:

Pancakes
Per one cup of dry mix add:
- 1 cup mashed banana, 1 tbsp cinnamon and 1/2 cup chopped pecans
- 1 chopped apple and 1 tbsp cinnamon
- 1/2 cup chopped apricots and 1 tbsp ginger

Oatmeal
- Try the pancake variations, just with less
- Try making the oatmeal in milk instead of water
- Add 2 tbsp peanut butter, 2 tbsp maple syrup, cinnamon and half a chopped banana

One of my faves- Mock French Toast

Whisk together:
1/2 cup ricotta cheese
2 eggs
1 tsp Cinnamon
1 tsp Sugar
1 tsp Vanilla or maple extract

Cook 'em like pancakes. Super tasty!

Country Breakfast Casserole

1 pound or more, frozen potatoes O’Brien
1/2 cup chopped onion
2 tablespoons chopped green bell pepper
2 tablespoons butter
1 pound cooked sausage or cubed ham or crumbled bacon
8 eggs
1/2 cup milk
Grated cheddar cheese

Remove potatoes from freezer. Sauté onion and green pepper in butter. Add potatoes and meat. Cook and stir until potatoes are separated, and mix well. Place in 9 x 13 inch buttered baking dish. (May be made the night before to this point, covered and refrigerated.) Beat eggs slightly with milk and pour into the baking dish, stirring gently to moisten potatoes. Sprinkle cheese on top. Bake at 350 degrees for about 45 minutes, or until done. Serves 8.

A Bit Different" Breakfast Pizza

6 servings 30 min 10 min prep
Change to: servings US Metric
1 (10 ounce) can prepared pizza crust (or use your favorite recipe)
1 (7 ounce) package prebrowned sausage patty, thawed
3 eggs
1/2 cup milk
salt and pepper
2 cups shredded cheese (pizza-style or use your favorite)

Preheat oven to 425 degrees F.
Press dough into the bottom and sides of a 12 inch pizza pan.
Bake for 5 minutes until set but not browned.
Cut sausage into small pieces.
Whisk eggs and milk in a bowl until frothy.
Spoon sausage over baked crust and sprinkle with cheese.
Pour egg mixture slowly over sausage and cheese.
S& P to taste.
Bake 15-20 minutes or until eggs

This is quick, easy, delicious!

Scramble eggs almost to the point of being done, add your favorite salsa and a cheese that goes with the salsa. Finish scrambling.

Serve on your favorite warm tortilla (we can get home-style flour tortillas and I warm them dry on a skillet and store in a covered dish)

Some of our guests enjoy some sour cream, some shredded lettuce, onions, etc. on their breakfast burrito's

Mango Juice is especially good with breakfast burritos.

Ingredients

2 handfuls of porridge oats
8 dried apricots
6 dried dates
A handful of sultanas
12 cashew nuts
1 eating apple
soya milk
plain soya yoghurt
fresh blueberries

This is best prepared the night before.

Chop all of the dried fruit and cashew nuts into small pieces. Mix them together in a dish with the porridge oats.
Pour over soya milk until the mixture is covered. Peel, core and grate the apple and mix into the muesli mixture.

Cover and refrigerate overnight.

The next morning stir the mixture and add a few spoonfuls of plain soya yoghurt and a handful of blueberries.

Blueberry Sausage Breakfast Treat

Ingredients

(4 servings)

3/4 lb Sausage, pork
2 c Flour
1 ts Baking powder
1/2 ts Baking soda
1/2 c Butter
1/2 c Sugar
1/4 c Sugar, brown
2 Eggs
8 oz Sour cream
1 c Blueberries
1/2 c Pecans, chopped


Instructions

Day before: Cook sausage and drain well. Stir together flour, baking powder, and baking soda. In large mixing bowl, beat butter until fluffy. Add sugars and beat until well-blended. Add eggs, one at a time, beating well after each. Alternate adding flour mixture and sour cream to creamed ingredients; mix well. Fold in sausage and berries. Pour batter into ungreased 13"x9"x2" baking pan. Sprinkle pecans on top. Refrigerate overnight.
Preheat oven to 350. Bake 35-40 minutes, until done. Cool on wire rack.




Cheesy Popovers

Ingredients

(12 servings)

2 Eggs, beaten
1 c Milk
3/4 ts Salt
1/2 ts Thyme, crushed
1/4 ts Sage, crushed
1/2 ts Basil, crushed
1 c Unbleached flour
1/2 c Grated cheddar cheese


Instructions

Combine seasonings with milk and eggs; add flour and cheese; mix until just blended. Pour into well-oiled muffin tins, filling 2/3 full. Do not preheat oven. Place muffin tin in oven, and heat to 450 degrees. Bake 30 minutes, no peeking. Remove from oven; turn off heat. Pierce popovers on 4 sides at right angles. Return to oven (do NOT turn on heat). Allow popovers to dry in oven about 10 minutes. Serve immediately.

cornbread muffins with honey butter; brunch buffet muffins (put shredded potatoes mixed with an egg & salt & pepper into muffin tins & press to bottom & sides of each tin to make a "crust" fill center with cooked breakfast sausage, beat eggs & milk with a little salt & pepper & pour into each tin. bake @ 350f for 15 - 20 minutes until center of each "muffin" is set)
