I've seen coconut sauces used in cooking.
My local chinese restaurant makes some of their dishes with what they call "white sauce". It's thick, semi-opaque and mildly sweet, tastes sort of like powdered sugar. Actually it's kind of gross when served in something like a seafood dish they gave me once, but it's white sauce.
