I have BBQ babyback ribs in the crockpot right now, and I'm trying to think of a good side dish. I have two potatoes and broccoli, and I'm just asking to see if anyone has any good suggestions? I'm getting tired of the same of stuff.

Twice Baked Potatoes

Just bake the spuds & while you're doing that chop up the broccoli and microwave it with a little water for a couple minutes until done.
Cut the spuds in half lengthwise and scoop the centers into a bowl and mash. Add garlic and chopped broccoli, some cheese and mix it up, add a little milk or cream and butter too, plus a shake of your fave. seasoning.
Pile this stuff back in the potato skins and top with more cheese and bake at 350 'til heated through. You might broil it for a couple min. to brown the tops..

Are you saying that you have 2 pots and broc and THAT is what you are serving, or that you want suggestions for side dishes USING these two ingredients? Or are you just asking for a NEW any-ingredient side dish suggestion?

If you want a NEW side dish that goes great with bbq, chili, TexMex, etc. try this recipe:

Fiesta Corn Salad

2 cans drained yellow whole kernel corn
2 cans drained white whole kernel corn
1 finely chopped red bell pepper
1 medium coarsely chopped red onion
3/4 cup mayo
1 9-3/4 ounce package crushed chili Fritos

Stir together first five ingredients and let set overnight (or 3-4 hours) in frig. Before serving, stir in crushed fritos.

This is a no-fuss, no-cook recipe. Very colorful and tastes good.

We are having chicken and bbq ribs for Christmas.Here are a couple of recipes I'm making for a sidedish.I also like making 7 layer salad and a cranberry salad/relish.Son is bringing appetizers. Broccoli Casserole 6 cups cooked broccoli 1 (10 3/4 ounce) can cream of mushroom soup 1 cup Hellmann's mayonnaise 1 teaspoon lemon juice 1 pinch paprika 1 1/2 cups cheddar cheese Put the broccoli in a baking dish. Mix all the other ingredients except the cheese. Spread on of broccoli. Sprinkle cheese on top. Cook at 350°F degrees until cheese is melted. You can also do this recipe by adding leftover chicken with the broccoli, it is really a delight. **************************************... Garlic Scalloped Potatoes Ingredients 5 cups thinly sliced potatoes 2 Tbs. butter 4 cloves garlic, minced 3 tbs. flour 2 cups 2% milk 1 tsp. dijon musatrd dash of nutmeg & cayenne pepper 1/2 tsp. pepper 2/3 cup grated Romano cheese,or whatever you prefer. 1 large onion, thinly sliced 1/2 cup fresh parsley, chopped Instructions: Preheat oven to 375 degrees Serves: 6 Instructions: 1. In boiling water, cook potatoes for 5 minutes unitl just barely cooked; drain & set aside 2. In a saucepan over low heat saute the garlic in half of the butter until garlic is soft about 1 minute. 3. Add flour, cook stirring constantly for 2 minutes. 4. Add a small amout of milk and stir to form a paste; Add remaining milk in 3 parts, mustard, nutmeg and cayenne pepper & and black pepper. 5. Use a whisk and stir constantly until sauce is slightly thickend & smooth. 6. Remove from heat, stir in 1/2 cup cheese and set aside. 7. Layer one quarter of the potatoes in a greased baking dish; cover with 1/3 of the onions and 1/3 of the parsley and 1/4 of the sauce. 8. Repeat until all ingredients are used, ending with the sauce. 9. Sprinkle with remaining cheese and dot with remaining butter. 10. Bake covered in the oven for 15 minutes, uncover and bake an additional 25 minuted until bubble and golden brown.

Thinly slice the potatoes, cut the broccoli into flattish florets, layer it in a dish that's been buttered and rubbed with garlic, cover with cream and nice cheese, season and bake in the oven for 30 minutes
