i have to make molasses cookies, but i don't see any recipes that tell you what to do if want to make bar cookies instead of drop/cut cookies.
any suggestions? i want to impress my lover with my newly emerging baking skills but i don't want to wait on batch after batch.

help?

Yes, you can but it would involve a little detailed explanation. Your dilemma now needs to be addressed, that is, making a molasses bar cookie that is quick.

A "brownie" is a bar cookie, and here is a short recipe for a molasses brownie/bar cookie.

Molasses Brownies

1 1/3 cups, sweetened condensed milk (NOT evaporated)
1/4 cup molasses
2 cups graham cracker crumbs
1 cup chopped nuts (optional)

Heat molasses and condensed milk in a sturdy pan; cook over low heat, stirring constantly, for 5 minutes or until mixture thickens. Remove from heat; add graham cracker crumbs and chopped nuts; mix thoroughly. Spread the dough evenly in a greased 6x10 (or 8x8) inch pan (or line pan with waxed paper). Bake in 350 degree F. oven about 15 minutes. Remove from pan immediately; (if waxed paper lined, strip off paper); cut into squares. Makes approximately 2 dozen squares, depending on size of pan and square cut.

Note: The use of sweetened condensed milk combines/provides the dairy/sugar recipe element. The crushed graham crackers provides the "flour/body" recipe element.

My grandmother and mother both made this recipe and would sometimes add chopped nuts and/or chocolate or caramel chips to the dough. If using nuts and chips, then ONLY 1/2 cup each. If only chips, then 1 cup. Both ladies would also sometimes make a cinnamon/powdered sugar/ milk or water glaze to drizzle on top of the bars before cutting. (I've always HATED molasses, but LOVED these molasses bars!) AND, you can now find CINNAMON chips in the grocery store. Yum!!

my best advice is to use recipes for baking that you trust. do them until you have it perfect and know how they go right and wrong before you start making up your own. i've made too many batches of mediocre cookies whan i could have simply made great ones if i'd used a great recipe.
