Cherry Delight
1 (12 ounce) package vanilla wafers, crushed
1 cup whipping cream
1 (8 ounce) package cream cheese, softened
1/2 cup confectioners' sugar
1 (21 ounce) can cherry pie filling
DIRECTIONS
Crumble cookies into a 9x9 inch pan and set aside. In a medium bowl, whip cream and set aside.
In a separate mixing bowl, whip together cream cheese and confectioners' sugar until smooth and fluffy. Fold whipped cream into cream cheese mixture and spoon over crumbled cookies. Spread pie filling over top and refrigerate overnight.

I think you'll love this recipe, though it should be made only once or twice a year at most (a lot of fat due to the cream cheese, etc.). I make it every year for the Holiday party here at work and always get asked to make it again the next year. It lasted 10 minutes last time I made it. Here's the recipe:
Poppyseed Chicken with Jasmine Rice
5-6 boneless skinless chicken breasts (cook in a slow cooker til tender or cover with water in a pot and boil gently until tender, about an hour; remove from pan and cool; shred by tearing apart with two forks)
1 8-oz package of cream cheese, softened (room temp)
1 8-oz container of Breakstone's sour cream
1/4 cup of butter (1/2 stick)
1 package of Ritz crackers (pulverized/crushed; use a baggie with a rolling pin a food processor if you have one)
1 can of Campbell's Cream of Chicken Soup
Poppyseeds (about 4-5 tablespoons)
Combine the poppyseeds, sour cream, cream cheese, and soup and blend well. Blend in the shredded chicken and spread into a 9x13 greased baking dish.
Saute the Ritz crackers with the butter and spread over top the casserole. Sprinkle with more poppyseeds if desired. Bake at 350 degrees for 45 minutes (more or less depending on your oven).
Serve over top of steamed Jasmine rice.

I came across the same issue last week! I made a dip with the cream cheese. This is to be served with Tortilla chips.
1 block cream cheese
1 can Hormel chili w/ beans
Shredded Mexican cheese
Spread cream cheese on a plate. Pour the 1 can of Chili on top of that and spread evenly. Finally, add a generous amount of the shredded cheese and sprinkle on top evenly. Pop the dish in the microwave for about 3 minutes or so (you will know its done when the cheese is melting on top. Serve warm with tortilla chips.

1 pound cream cheese, room temperature
1 cup Jamaican hot pepper sauce
assorted snack crackers
DIRECTIONS
Place the cream cheese onto the center of a plate, and pour the hot pepper sauce over so that it drips down the sides. Serve with assorted crackers.

Go to the store pick up a pepper jelly
Pour 1/2 of the jar over cream cheesee and serve with crackers for a fast appetizer
Take a can of crab meat drain pour over a block of cream chees with some cocktail sauce and serve with crackers
Take the block of cream cheese one can of crab meat drained mix together form a ball for a Yummy cheese ball Serve with crackers.

I have a great repice for choc cover peanut butter ballls that are made with cream cheese - 2 cups powered suger, 1 cp butter, 11/2 cups peanut butter, and 8 oz cream cheese - mix together roll iin ball, then dip in chocolate made with choc chips. The are very good.

Fines Herb Cheese
1 8oz block of cream cheese
1 tsp dried basil
1 tsp dried oregano
1 ts[ dried thyme
1 clove garlic crushed
2 tsp white wine
Combine all ingred in a food processor. Serve with crackers, French bread or use as a filling for sandwiches.
Crab layer "dip"
On a plate layer ea ingred in order

crab meat 6 oz

Poor man's cheesecake.
Take 1 block of cream cheese, unwrap it, and put it on a plate. Pour cherry pie filling (or raspberry or blueberry or whatever flavor you want) on the top of the cheese. Serve with Wheat Thins.
I had this at a party, and it was great!

the other day i found some cream cheese in the fridge that was about to expire so decided to make something of what i've got. now it's one of my favorite meals and i'm cooking that almost every second day! and it's more than simple. you need:
a pack of cream cheese
a can of forest mushrooms
a few cubes of frozen spinach (defrosted)
ready made pancakes
pasta sauce
grated cheese
salt & pepper
mix cream cheese with mushrooms and spinach, add salt & pepper. roll the mixture into pancakes. place in baking tray, top with pasta sauce and grated cheese, bake for about 20 mins and enjoy!
and you can replace mushrooms and spinach with whatever else you like.

I used to make this great creamed veggie soup using cream cheese and bri in the blender. Yummy!!
Also, you can make some great quick truffles dipping small balls of cream cheese into chocolate then let dry - Makes great gifts!
