The term your seeking is genuflect. That is bending down on your knee, and making the sign of the cross. The sign of the cross is just that, you may see it as a " + " in Missals. Now, the Catholic church has the Latin Rite and the Eastern Rites. In the Latin Rite the sign of the cross is made forehead, center of breastbone, left to right 'shoulders'. However, the Eastern Rites make the sign "backwards" forehead, breastbone, right to left. Both are correct. The only time that 'bowing' is allowed is if the parishoner/priest can not kneel due to arthritis, pain, and bowing in reverence is acceptable.

I think you are referring to a genuflect. I would describe it as more of a kneel and cross as opposed to a bow. It is a sign of respect or reverence.
