Because God loved the world. He loves us!!! He wants us all to attain to the earthly paradise and perfect human health like it was cut out to be in Genesis.
God's original purpose was for Adam and Eve to be fruitful and fill the earth and become many.
Adam was the first and only other perfect man to walk the earth besides Jesus. Jesus was the only acceptable sacrifice to take the place of Adams sin and make it possible for our sins to be forgiven again, and us to have the hope of everlasting life.
At Romans 5:12-21 it brings this point out, and how only Jesus could replace that.
