I was just curious if un-neutered cats would mate in the winter time. I've seen cats, uh, 'in action' during the summer and fall but never in the winter. I just didn't know if they did that when it's super cold outside. :)

Unlike dogs (Diestrus), Cats are polyestrus. They'll come in heat at least once in month irrespective of season. Once your tom notices a queen in heat, he will try to persuade her irrespective of the season.

My cat (a five month old, yet to be spayed female) went into heat two weeks ago. So I am assuming that if I had let a male cat anywhere near here during that time, they would have mated and I would be expecting little furballs... in the freezing cold northeast winter....

Yes, any time a whole (un-altered) female is in heat, she can mate and became pregnant.
Estrus Behavior in the Queen-
A non-spayed, female cat is called a queen. When she comes into estrus, or "heat" she is ready to breed/mate.

I have many cats. And the answer to your question is Yes.
They mate in the winter. My cat and her friend as you would call him they always went to this old barn. I think they go somewhere warm to mate in the Winter. She became pregnant afterwords. I hope this answered your question.

Yes they do , we just got a litter of three two days ago inside of course and 10 * out side here in Iowa , we keep our male out side in an enclosed area and that is were we do the breading .

I'm pretty sure they can mate anytime, but their mating season is in the spring, more often then not.
