My late grandmother was German & made the best deviled eggs, but unfortunately I never got the recipe from her. It was not the typical recipe, I think the basic ingredients, aside from the hard-cooked eggs, were prepared yellow mustard, vinegar, a little salt & pepper, sugar, and maybe a little milk for thinning...NO mayonnaise or Miracle Whip at all. I may have to experiment to find the right measurements, but was hoping maybe someone knows how to make these & can help me out. Thanks!

DEVILED EGGS
(German) - (Pennsylvania Germans)
Boil half a dozen eggs until hard. Remove shells, cut in halves, mash
the yolks to a smooth paste with about 1/2 teaspoon mixed mustard, 1
teaspoon softened butter, pepper and salt to taste. Some like a small
quantity of cold boiled minced ham added. When ingredients are well
mixed, press enough of this mixture into the cup-shaped whites of eggs
to form a rounding top. Serve on a platter of parsley. To boil eggs
uniformly, they should be placed in a wire basket and plunged into
boiling water and boiled not longer than 15 to 20 minutes from time
water commences to boil, then pour cold water over and shell them.

Bacon Deviled Eggs:

3 slices bacon (3 oz.)
8 hard-cooked large eggs
1/3 cup mayonnaise
2 tablespoons thinly sliced green onions
1 teaspoon prepared mustard
Salt and pepper

1. In an 8- to 10-inch frying pan over medium-high heat, cook bacon, turning slices as needed, until browned on both sides and crisp. Transfer to paper towels to drain. When cool enough to handle, crumble bacon.

2. Cut each egg in half lengthwise; gently scoop out yolks and place in a bowl. Mash yolks with a fork, then stir in mayonnaise, green onions, mustard, and crumbled bacon until well blended. Add salt and pepper to taste.

3. Spoon or pipe about 1 tablespoon yolk mixture into the hollow of each egg-white half. Serve immediately or cover and chill up to 4 hours.

Yield: Makes 16 deviled eggs; 8 servings

Try this one..This one uses yogurt instead mayo or salad dressing.

6 Hard-cooked eggs
1/4 c Plain yogurt
1 ts Instant minced onion
1 ts Parsley flakes or freeze
-dried chives
1 ts Lemon juice
3/4 ts Prepared mustard
1/4 ts Salt
1/4 ts Worcestershire sauce
1/8 ts Pepper
Paprika
Cut eggs in half lengthwise. Remove yolks and set whites aside. Mash the yolks with a fork. Blend in the remaining ingredients. Refill whites using about one tablespoon yolk mixture for each egg half. Sprinke paprika on top if you'd like.

Here is another one:

INGREDIENTS
6 hard-cooked eggs
2 tablespoons mayonnaise
1 teaspoon sugar
1 teaspoon white vinegar
1 teaspoon prepared mustard
1/2 teaspoon salt
Paprika
DIRECTIONS
Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, sugar, vinegar, mustard and salt; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.

Deviled Eggs with Bacon

6 large eggs, hard boiled
1 tbsp. mayonnaise or more if needed
1/2 tsp. white vinegar
1 tsp. prepared horseradish
1/2 tsp. dry mustard
Dash of Tabasco
Salt and pepper to taste
4 slices bacon, cut into small pieces and cooked crisp
Fresh parsley for garnish

Preparation:

Halve the eggs and carefully scoop out the yolks and put them into a mixing bowl. Add mayonnaise, vinegar, horseradish, mustard and Tabasco and blend well.

Season to taste and place the eggs on a decorative dish. Can be made to this point a day ahead and stored in the refrigerator covered with plastic wrap.

Sprinkle with bacon bits and chopped parsley before serving.

The good thing about deviled eggs is that you can get creative and put what you want. I put a little mayo, mustard, minced onion, garlic salt or powder,pepper, dill relish, a slice of celery stalk to garnish, and a shake of paprika. I like to add a little cumin to my yolk mixture sometimes. If you don't use a piping tube or bag, I double ziplocs and snip the corner to pipe my stuff into the egg.

i could hardly find deviled eggs without mayonnaise nor miracle whip. most are with mayo or miracle whip. but here are two deviled eggs recipes without mayo nor miracle whip

Devilled Eggs
4 hard-boiled eggs, cut in half, lengthwise
1 ½ tbsp/23g onions, finely chopped
2 green chillis, finely chopped
1 tbsp/5ml coriander leaves, chopped
1/2 tsp/2.5ml salt
2 tbsp/30g mashed potatoes
oil for deep frying
1 tbsp/15ml plain flour
2fl oz/60ml/1/4 cup water
1-Remove the yolks and mix with the onions, chillis, coriander leaves, salt and mashed potatoes.
Put the mixture back into the egg whites. Chill for 30 minutes.
2-Heat the oil in a karai over high heat. While the oil is heating up make a bat with the flour and
water. Be careful not t allow the oil to catch fire.
3-Dip the eggs into the batter and slip into the hot oil. Fry until golden, turning once.


GUACAMOLE DEVILED EGGS

INGREDIENTS:
6 whole eggs in the shell
2 avocados - peeled, pitted, and mashed
1 tablespoon chopped cilantro
1 tablespoon minced green onion
2 teaspoons minced seeded jalapeno pepper
2 teaspoons fresh lime juice
1/2 teaspoon salt, or to taste
1 dash hot pepper sauce (e.g. Tabasco), or to taste
1 teaspoon Worcestershire sauce, or to taste
1 teaspoon Dijon-style prepared mustard
1 pinch paprika


DIRECTIONS:
1. Place eggs in a saucepan and cover with cold water.
Bring water to a boil and immediately remove from heat.
Cover, and let eggs stand in hot water for 10 to 12
minutes. Remove from hot water, cool, and peel. Slice
eggs in half, and remove yolks to a mixing bowl.

2. In the bowl with the yolks, combine the avocado,
cilantro, green onion, and jalapeno. Stir in the lime
juice, and season with salt, hot sauce, Worcestershire
sauce, and mustard. Mix well, and fill empty egg white
halves. Chill until serving. Sprinkle with paprika just
before serving.


Yield: 8 servings.

Are you absolutely positive there's no mayo or Miracle Whip in them? It doesn't take a lot. My family's German and I grew up in a very German area, and my grandma always used MW and so did my mother. I like to see that she used a touch of vinegar in hers too. My husband thought I was insane the first time I made them for him with vinegar, but he loves them now. With a touch of paprika on top and a green olive half.

Sorry I couldn't help more, I just glanced through my community cookbooks, and they all call for MW or mayo too.

My deviled eggs contain hard boilded eggs,small dab of mustard,miracle whip,S&P,Paprika as some color on the top of them.They are yummy.
