thin slice them, less than 1/4 inch, toss with olive oil and spices of your liking, salt and pepper, and lay them on a baking sheet in a single layer. Bake at 400 for 30-45 minutes. Flip half way thru. makes homemade crispy chips. you can also cut them in wedges for a more substantial steak fry type thing. Key is the hot temperature to get them browned. Try dipping in a mix of sour cream and Thai Sweet Chili Sauce (in most supermarklets) - divine!

I am assuming you mean a whole sweet potato? Bake them, skin-on, and NO foil. Foil steams them. Do not fry any kind of potato if you want them crisp, (unless making homemade chips, or fries) because they absorb oil quickly. You will only brown the outside of them, but the inside will always be moist, since potatoes contain so much water. Broiling them will also brown only the outside, and are too easily burnt because the heat is too high. The best way is baking. If you are going to peel the sweet potato first, add a little olive oil to them, toss in a bowl and bake on a cookie sheet, at about 350 to 400 degrees for about 1/2 an hour. Easy. Happy Cooking.

this makes very crispy potatoes with warm, soft insides.
first, wash the potatoes and peel if you don't want the skins on. cut them into smallish pieces, about 1/2 inch cubes. (doesn't have to be exact.)
next, use a combination of vegetable oil and melted margarine or butter to coat the potatoes. toss them in the oil mixture (you can use just oil if you want, but the butter lends a good flavor).
next, place potatoes in a glass baking dish and pop into a 350 degree oven for about 25 minutes. pull them out and turn them over, then turn the heat up on the oven to 450 and return the potatoes to the oven for another 15 minutes. after fiften minutes, toss the potatoes again, and continue to check on them every 5 minutes until they are the desired crispiness.
I find in my oven that 45 minutes total cooking time usually does the trick, but all ovens are different. season the potatoes once they are done.

I cut them into 2 inch slices, put them in a pan, drizzle olive oil on them and sprinkle rosemary. If you cover them part of the time then open it for the last half, they are firm, but not crispy. Try not covering them, but it may take a while to cook--perhaps a quick broil at the end may do the trick.

You can cut them into small strips like you would be making french fries. Toss them with oil and seasonings (salt and pepper). Spread them out on a nonstick baking sheet. Bake them at 450 degrees F for about 35 minutes turning once until brown and crispy.

Cut them very, very thin and deep fry them. They
will be crispy.
If you don't want to deep fry, then I suggest broil them
and keep an eye that they don't burn. You could try blanching
them, but I think unless you press them in papertowels first,
they will be too soggy.
The sweet potato itself must be very fresh, not soggy.
You may wish to keep the peel on it to help hold the shape.
