Anyone have a good recipe to make really good chicken breasts?

One word for you. CHICKEN PICATTA.
Ok, so its two words. Still a great recipe! This recipe will put the others to shame, I promise you! And its SO easy, you will feel like pro when you serve this to your family and friends.

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Instead of chicken stock, I like it with white wine Just use a wine you like to drink, and it will taste great.

It depends on what you want to do with them.

Chicken Marsala is always good. My favorite recipe is Emeril's from the Food Network.

I also make a lemon Chicken.

Pound the chicken to about 1/2 inch thick, dust with flour, and fry.
Then add chicken stock, and lots of lemon juice. Let simmer till chicken is cooked through. Thicken sauce, and add a dash of lemon juice for 'freshness'. Serve with white rice.

Most of the recipes I've found for Lemon Chicken only use a Tablespoon or 2 of lemon juice, but I like it to have bite, so I add about 1/2 cup.

4 split bone-in skinless chicken breasts
1 cup water
1 cup ketchup
1 teaspoon apple cider vinegar
1 tablespoon brown sugar
1 teaspoon ground pepper (measured)
1/4 teaspoon celery seeds
1 bay leaf
nonstick cooking spray, as needed

1-Preheat oven to 350 degrees F.
2-Use poultry shears to cut each breast in half (poultry shears will easily cut through the bones).
3-Heat a large nonstick skillet over medium high heat, spray with nonstick cooking spray, and brown chicken pieces briefly (not to cook all the way through).
4-Place browned chicken pieces into a 9x13" casserole sprayed with nonstick spray.
5-Combine water, ketchup, vinegar, brown sugar, pepper, and celery seed with a whisk until blended.
6-Pour sauce over chicken, add bay leaf to the pan, and bake uncovered at 350 F for 30 minutes.
7-Baste chicken with some of the pan drippings and continue cooking until the chicken is fully cooked, approximately another 30 minutes (time will vary based on the weight of your chicken pieces) Once chicken is fully cooked, remove to a platter and if desired, pour any remaining pan drippings/liquid into a gravy dish to use as a dipping sauce.
8-Or pour any remaining sauce into a saucepan and heat until reduced (you can thicken this by adding a little flour that has been whisked with a small amount of water first and whisking this mixture into the heateed drippings and cooking until thickened).
9-*Ifyou prefer, you may substitute bone-in chicken thighs or drumsticks in place of the breasts.

Chicken Breasts Supreme

Chicken breasts with a homemade mushroom sauce.

INGREDIENTS:
6 chicken breast halves, bone in
3/4 teaspoon seasoned salt
paprika
1 cup chicken broth
1/4 cup white wine
1/4 cup chopped green onion
1/2 teaspoon curry powder
dash pepper

Mushroom Sauce:
2 tablespoons all-purpose flour
1/4 cup cold water
pan juices
1 can or jar (3 ounces) sliced mushrooms, drained
PREPARATION:
Sprinkle chicken breasts with seasoned salt and paprika. Place chicken breasts in a large shallow baking pan, skin side up. Combine chicken broth, wine, onion, curry powder, and pepper; pour over chicken breasts.

Cover pan tightly with foil. Bake chicken breasts at 350° for 30 minutes. Uncover and bake about 45 minutes longer, or until tender. Remove chicken to a warm platter. Strain pan juices and reserve for mushroom sauce.
Prepare mushroom sauce. In a saucepan, blend flour with cold water; slowly stir in pan juices. Cook, stirring constantly, over low heat until sauce is thickened and bubbly. Boil for about 3 minutes. Add sliced mushrooms; heat through. Spoon mushroom sauce over chicken breasts for serving.
Chicken breasts supreme with mushroom sauce serves 6.

try this, my husband and i love this chicken breast recipe

Creamy Swiss Chicken Breast

* 4 chicken breasts, cut each breast into 2 parts, so make 4 breasts
* 1 cup 15 % cream
* flour as needed, mixed with paprika (as needed), plus dashes of salt (as needed)
* 1/4 cup water
* 2 tsp. cornstarch
* butter or margarine (as needed)
* 2 tbsp cherry whisky (I use McGuinness)
* 1 tsp grated lemon rind
* 1-2 tsp fresh lemon juice
* Mozzarella cheese, grated, as needed

- Wash the chicken breast then roll onto the mixture of flour, paprika and salt

- Heat butter/margarine and fry until both side slightly golden brown, then add water, cover the pan and leave it until water boiled (15 minutes)

- In a small bowl mix 1/4 cup of cream with cherry whisky, lemond juice and rind, plus cornstarch well.

- Place the cooked chicken in a baking dish

- Saute the mixture of cream in the drippings of chicken in the pan. Saute until thicken, adding the rest of the cream, stir occasionally.

- Pour cream onto the chicken on the baking dish, cover with aluminium foil and bake on a preheated oven, 350 F for 30 minutes.

- Open the foil, watch out for the hot steam, spread cheese, and cover back the foil, and bake for another 5 minutes or until cheese melted.

Creole Pecan Chicken Breasts

Makes 4 servings

Ingredients:

4 boneless, skinless chicken breasts
1 cup flour
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 egg whites, beaten until frothy
6 tablespoons Creole mustard, divided
1 cup finely ground pecans
1 cup fresh bread crumbs
1/4 cup vegetable oil
1/2 cup skimmed evaporated milk
toasted pecan halves

Preparation:

Combine flour, salt and pepper in a shallow bowl. Blend egg whites and 4 tablespoons mustard in a second bowl. Combine pecans and breadcrumbs in a third bowl. Dredge each chicken breast in flour, shaking off excess, then in egg white mixture, then in pecan mixture. Press so that coating adheres to both sides.

Heat oil in a large skillet over medium high heat. Cook chicken breasts about 3 minutes or until crisp and brown. Turn, reduce heat to medium and cook about 5 minutes or until chicken has lost its pinkness.

Meanwhile, in a 1 quart saucepan, warm evaporated milk over medium heat. Stir in remaining mustard. Cook about 5 minutes or until heated. To serve, slice chicken breasts diagonally and top with sauce. Sprinkle with toasted pecan halves.

Marinate in buffalo wing sauce, dip in bread crumbs and bake at 375 F for 20-25 minutes or until done all the way through. This is great if you slice them and serve them over a salad- with blue cheese dressing of course.

dip in egg (This works with boneless or bone in)
bread with instant potato flakes Parmesan cheese and seasoning mixed
Bake in the oven 400 for approximately 20-30 minutes

serve with a potato and a salad

Taco Chicken
Cube boneless chicken and cook in a skillet to juices run clear.
Use one package of taco seasoning mix as directed on the package
serve over rice with a veggie
or as you would tacos

Slice into halves so you have thinner pieces. Dip in seasoned (use your favorites) egg/milk mixture then coat with bread crumbs. I use the regular crumbs I buy from my local grocery. Lay them in a baking dish and place a piece of cheese (your favorite, I use Swiss or Provolone). Bake at 350 for 30-45 minutes. These make wonderful sandwiches or you can serve with side dishes and veggies. Good Luck!

I like to cook them in a mixture of tomato paste, honey or sugar or splenda, wine (red or white), chopped garlic and onions, and if you want, a little tabasco sauce. Sorry that I don't have exact amounts, though I tend to use a lot more wine than the rest of the ingredients, and cook it in the oven--be sure not to overcook them!
