When I make homemade red sauce I add some sugar to help with the acidity (along with a pinch of baking soda). Sugar is also used when making bread. Not sure of it's basis in that but it makes certain foods taste better. Just make sure not to add too much. If a recipe calls for 1/2 teaspoon, put in a little less, but not as little as 1/4 tsp.

Depends on what you are making but sugar is often added to balance another (often sour) flavour like for example when you make sweet and sour pork, or sweet and sour sauce where the sweet is sugar and the sour is vinegar. Bon appetit!
