cook potatoes first - if cut small they should cook in 10 minutes or so. then add peppers to pan, cook for a few minutes. Add Eggs to pan, turn down heat, and let cook until eggs firm up.

Yes 2 egg,s are fine,Slice the peppers thinly and grate the potato,Put the eggs into a pan allow to set for about 1 min add the pepper&potato cook for 30seconds turn the omelett cook for a further 1 min.Enjoy

Cook your potatoes first and put them in oven to stay warm. Throw your peppers in a pan and saute them for a minute or two, them mix in your eggs. You can prepare your eggs first by pouring into a bowl then adding just a tiny bit of milk or cottage cheese or both. Cook your eggs and at the end, add a little cheese then pour over your potatoes. Really a good meal!

Cook peppers & potato first, then add them to the eggs in the pan, and yes, two eggs, plus the other stuff, should be enough for any normal person!

I always use 2 eggs per omlette, and when i am wisking them, i add just a little bit of milk too. To cook it just cook the egg in a pan kinda like a pancake, but i use those small pans so then the omlette is a perfect circle. Flip the egg so both sides are cooked and then add your fillings on top on one 1/2 and fold the other half over it, cook on low unitl heated through. I alwasy cook my fillings in a separate pan before adding them so they are cooked and warm and my egg doesnt get over done.

yes 2 eggs is enough for 1 person. potatos first in boiling water or steam them (your choice)steaming would be healthier though. I would grate the potato and then add in the eggs and pepper and whisk with a fork until the potatoes and pepper are mixed together and the yolk is mixed in with the white of the egg and fry it :D

boil your potatoes off first then slice, fry off the peppers in a little oil till softened a little, add the potatoes fry a bit more till they get a bit of colour. whisk the eggs with a bit of salt and pepper then pour over peppers and potatoes. let it cook on one side then either put under a hot grill to cook the top or turn it over by sliding it out onto a plate, put the pan back ontop then turn plate and pan upside down. (little bit tricky this ). this is also tasty with onion potato and salami.

2 eggs for one person will make a good size omelet,u can chop the onions and peppers toss them into the egg mixture.Now for the (fried potatoes) you can slice them toss them in a frying pan cook them,add onions whatever u fancy.I say cook the potatoes for 30 mins or so depends on how big the slices are.Now my mom takes the potatoes whole boils them,then slices them, fries them in Olive Oil,salt pepper.They are yummy. Don't be a light weight! Onion, tomato, mushroom,red pepper,chicken or ham Fried in butter, with a dash of garlic salt.
Then add 4 or 5 eggs depending on size. Cook through then add cheese. Yum Yum. Don't eat too many or you'll get lardy!
