I have a small bag of yukon golds that my bf insisted we had to have, but he seems to forget they're around most of the time. Since they're still good, and there are just too many (I'm not a fan of solid taters, I like mine mashed with lots of butter), I am considering putting them in the dehydrator, after which I want to put them in the food processor to turn them into potato flakes.

Has anyone made their own instant mashed potatoes or potato flakes, and am I going about it the right way? Any help is appreciated! Thanks so much!

Cook the potatoes, mash them thoroughly so there are no lumps and then dehydrate them. You'll want to make them watery so they'll pour evenly on the plastic sheet. Don't use any type of butter or milk because the grease will go bad during storage. When they are brittle sheets, let them cool and crumble them into an airtight container. Voila! Homemade instant mashed potatoes.

I actually just made this. We're having sandwiches for dinner so instead of mashed potato leftovers as a side, I decided to turn them into fries. My mashed potatoes were a little thick so it was pretty easy, I molded them with my fingers into the shape of a french fry, lined them up on a baking sheet, sprinkled them with a super awesome seasoning salt, and popped them in the oven at 350 degrees. After about 20 minutes, one side was crispy so I flipped them over. 20 min for the other side. Delicious.
