cooking is fun but not when your feeling like your legs are going to fall off so i need a nice easy meal thats tastes nice and doesnt take that long.

Try hot ham and cheese sandwiches and some chips that sounds good and easy.

Here is a very simple and easy Italian chicken recipe. Take some boneless skinless chicken breasts, and pound them to 1/4 inch thick. If you use a big ziplock bag, it cuts down on the mess. Dredge them in flour seasoned with salt and pepper, and shake of the excess. Saute them in olive oil for 2 minutes a side, and remove from the pan. With the pan still hot, add a cup and a half of either white wine or chicken stock. Scrape the bottom of the pan to get up all the bits still stuck on the bottom, and put the chicken back in. simmer until reduced by half. Add a 1/2 cup of milk or cream, some grated parmesan, and season to taste. Serve over noodles.
Takes less then 30 minutes including prep time. Some good add-ins to the sauce are pancetta, peas, artichoke hearts, or any vegetable. Use your imagination. This is the base of many many Italian sauces, and is easy to modify to your tastes.

This is a family favorite! Easy Chicken Alfredo..
1 lb Chicken Tenders
olive oil
Lipton Broccilli Alfredo Noodles
chicken broth
1 handful of Frozen broccilli
Palmful of parm cheese

Heat oil olive (about 1 tablespoon) in a skillit. Add chicken tenders, cook until browned. Take out and slice. Follow the package to cook the noodles in the same skillit. Use chicken broth instead of noodles. Add the chicken back to the skillit with the broccilli. Cook for about 8 minutes. When done add parm cheese. It all takes about 18 minutes.

Mac and Cheese with Tuna, and Veges ( 1/2 a LB. ground beef can be substituted)

1 box macaroni and cheese, cook by package directions
2 cans of drained chunk Tuna, or 1/2 a pound cooked hamburger meat, drained of fat
1/2 a package mixed frozen vegetables, or fresh, sauted in a little oil, with salt and pepper
1 cup of extra, fresh grated cheddar cheese
Mix all together, and bake until hot, about 15 to 20 minutes on a 350 oven.

OR


Chicken and Rice

4 to 6 leg quarters, or 4 breasts with skin on
1 cup uncooked rice
1/2 a cup raw carrots, chopped
1/2 a cup broccoli florets
1/2 a yellow onion, chopped
2 cloves of garlic, chopped
2 bay leaves
1 tablespoon dried oregano
1 teaspoon of salt
1 tablespoon of black pepper
2 cups of chicken broth

Put everything in a roasting pan, except the chicken
Stir it well
Place the chicken pieces on top, (season the chicken with some of the herbs and spices, but not the salt, the salt will dry the chicken out)
Cover with a piece of foil
Bake in a 400 degree oven for 30 to 40 minutes
remove the foil, and let roast until the liquid has cooked into the rice, and so the tops of the chicken will brown. Delicious!

HINT: If you dont want to use fresh veges, use a half a bag of frozen vegetables, any mix you like, put them in while they are still frozen, do not defrost.

OR

Twice Baked Potatoes

2 russet baking potatoes, per person
1/2 a pound ground meat, or 2 breasts of chicken, cut in small pieces
1/2 a yellow onion, chopped
4 to 5 cloves of garlic, chopped
about two cups of grated cheese, I use cheddar, but you can choose any other you like, Gouda, mozzarella, jack etc
1/2 a cup mayonaise, or sour cream
1 tablespoon dried oregano
salt and pepper to taste
Pepperoncini salad peppers for a garnish (just buy a jar of them in the pickle isle)

Bake the potatoes at 350 degrees for an hour
Cook your chicken or ground beef, adding the onions, garlic, herbs and spices (not the salt), then drain of any fat, let cool
Cool the cooked potatoes, then slice a V out of the top, so the part you cut out looks like a fat french fry.
with a spoon, scoop out the potato meat, leaving some at the bottom, dont scoop all of it out, you want the skin as your serving container
Mix the potato meat, the chicken, or ground meat mixture together well
add the mayonaise, or sourcream, 1/2 of the cheese, adding also salt and pepper, as needed, mix well, gently. You will need to taste the mixture, to make sure its to the flavor you like.
Stuff the potatoes with the mixture, put them on a cookie sheet
Lay grated cheese on top, and a pepperoncini per potato
Gently lay a piece of foil over the potatoes to keep the cheese from burning
Bake at 350 for 1/2 an hour
(Chances are you will have some stuffing left over. Save this and pour over warm bread for a quick snack)

Serve with any warm bread of your choice, YUM!

well you can crock pot the night before , stewed beef is great and yyou can do so much with it,

like eat stew, or just stew the meat and shred it for tacos, or tortillas, with some guacamole, and you can weekend chop

chop up some veggies, and stick them in separate containers,
then use them when you need to ,it makes it faster and easier.

rachel ray has the eassiest and best recipes,

i also make quiche for breakfast purposes, and it hides the veggies for kids

string bean cassaroles, and hamberger helper

bisquick, pillsbury, and betty crocker have good recipes,

oh and stoffers has those ready made meals
stir fry

and BJ's has some chicken parm, lasagne, mac and cheese meals that are already to stick in the microwave.

and if you are really tired just slap some cold cuts on some sour dough bread , butter the outside of the sandwich and slap it into the george foreman grill to warm up a paninni

Here is one that I found in a magazine. It cooks in the microwave. Its really good.

Potato-Sausage Casserole

Ingredients:
16 oz smoked sausage (sliced in 1/4 in sections)
4 med potatoes cut potatoes
1/2 med onion (diced)
1/2 bell pepper (chopped)
I can creamed corn
salt and pepper to taste

Spray a 2 qt microwave safe dish with cooking spray.
Combine all ingredients in bowl.
Pour mixture in microwave safe dish.
Microwave on high for 25 minutes or until potatoes are tender. Stop every five minutes to stir and cook until done.

Another easy one that I make often is Mexican casserole. I got it off of Mr. Food a few years ago.

Ingredients:
1 lb ground beef
1 can cream of chicken
1 can cream of mushroom
bag of Tostitos corn chips
1 can of Rotel
1 can of Ranch style beans
1 pkg shredded chedder cheese (2 cups)

Brown ground beef
In large sauce pan add cream of mushroom, cream of chicken, rotel, ranch style beans and half of the cheese and the ground beef and heat until it starts to boil.

Layer a 13x9 inch pan with crushed corn chips on the bottom. Pour mixture on top and layer with more crushed corn chips.

Bake for about 30 minutes at 350 degrees and then sprinkle the last of the cheese on top and take out when cheese is melted. Let it set for about 5 minutes or so and serve.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Quick, easy and tasty: Use chicken tenders or hamburger. Lightly cook chicken tenders (or brown hamburger meat and drain off grease). Mix in Campbell's Cream Of Chicken soup and Chicken broth (enough to make gravy for all usually two cans soup and one broth). Stir it up and let simmer for awhile. Make a side dish of rice or potatoes to pour sauce and meat over then make a veggie. Hint for quick cooking: Use frozen veggies and nuke them with a little butter. 10-12 minutes no fuss, no muss... Really, really fast and the most simple? Brown hamburger and melt cheese over the top let everyone make their own sandwich with it. You will not believe how different it tastes from a regular burger! Stove top Tamali Pie
1-1/2lbs ground beef
1 can kidney beans
1 package of taco seasonings
1 medium onion
1 green pepper (if you like them)
1 box of corn muffin mix
cheese

Fry the ground beef and drain
Add the onion, green peppers, beans, and taco seasonings and simmer for 10-15min
While mixture is simmering fix the corn muffin mix according to package directions
Once the ground beef mixture is done....add whatever type of cheese you like and however much you like to the top of the mixture
Then spoon the corn muffin mix over the top & smooth out over the entire beef mixture.
Place a lid on it & let the corn muffin mix rise which should take about 20-25 min.
Once the muffin has raised & looks gold brown....plate & serve

This is something I made up a few years ago. It is fast, easy and hearty! Great for the cold winter nights. As with anything, you can flavor with your choice of seasonings. You can also adjust the heat with the type of salsa you use.

Tortilla Soup

1 can refried beans
1 can black beans
1 can chicken broth
1 jar salsa
1 bag frozen corn
1 bag pre-cooked chicken strips
2 cups shredded cheese
Tortilla chips

Put everything but the cheese and chips into a pot.
Bring to a boil.
Let simmer for 20-25 minutes.
Add almost all cheese, stir and let simmer for 5 more minutes.
Crush tortilla chips in bottom of bowl. Add soup. Garnish with cheese, sour cream and more (whole) chips if desired.
