Roquefort. It's delicious, and it's made by leaving some cheese in a cave until it go's mouldy. But here's the nub, there is only one cave in the whole of france that you can leave cheese in to turn it into Roquefort and I like the idea that my cheese comes from only one cave. This one time, I had two pieces of Roquefort in my fridge at the same time, and I wondered if they'd known each other back in the cave. They might even have been on the same shelf!

It depends. I love a good mature cheddar cheese but I also adore feta cheese in salads and on pasta

Cheddar cheese, medium or strong, I dont care, but not mild.
Or I like a bit of Edam, Red Leicester, dont like soft creamy cheese, or blue mouldy cheese. Like also Parmasan on my Spag Bol

Cabrales - a VERY strong blue cheese from Spain.
Goats milk brie. Creamy with a more distinct flavor than cow's milk cheeses.

Easier to say what cheese I don't like. Blue cheese. But give me a nice piece of Wensleydale; Emmental; Gruyere .... I'm happy.

A nicer mild cheddar for everyday use. Love it on crackers or in sarnies.
I also love breaded, deep fried brie and camambert with redcurrant jelly as a nice starter.
