I have been on two western caribbean cruises with Royal Caribbean.
George Town, Grand Cayman: loved it!!! Stingray City sandbar is amazing (but go early in the day)
Cozumel, Mexico: also beautiful especially if you get away from the port and head to the opposite side of the island to see the rocky coast
Belize City, Belize: okay at best. beautiful diving offshore and the Belize Zoo is nice. lots of poverty everywhere.
Costa Maya, Mexico: a new location built by the cruising industry. not much to do outside of the pool area. my least favorite place
Labadee, Haiti: loved it!!! very laid back and quiet and BEAUTIFUL!!
Ocho Rios: nice new island village but lots of poverty and haggling by locals. Dunn's River Falls is beautiful but crowded.
ENJOY

I liked the cruises out of San Juan PR that take you to several islands. This way you wake and have breakfast overlooking a different island each morning. My favorite island would be Dominica. It's like Hawaii with out the extra days of travel time. I usually try to do my Caribbean travels either early in the year, march, or late in the year, November/ December. Before hurricane season and before high rate periods.

was on a eastern caribbean cruise the first week in January this year. It was a 7 day cruise.
I loved our stop in grand caymen, We went swimming with the sting rays. It was so much fun.
It really depends on the activities that you think YOU would enjoy, The weather was in the 80s
The only bad part was that we had to come home to the cold.

The caribbean islands are generally warm througout the year but some of the northerly islands like Bahamas,Jamaica, and Cuba are affected by cold fronts from North America during that time you specified above.

It depends on your personality. As far as the most beautiful water, I think St Martin & St Thomas are the best. For partying, I think Jamaica and Aruba are better. For shopping, back to St Martin & St Thomas.
