like shepards pie, something simple for dinner. To give my mum a break. With it i would do chips, any suggestions.

Shepards Pie and Chips (french fires to us yanks) sounds great. I'm not sure how you make it but I...

Pie dough for double crust
pounds of lamb/beef mixed
peas
carrots
turnups (opitional)
potatoes
beef stock/broth
butter
flour.

I'm really bad with measurements but, I would lay the bottom crust down in the pie tin. Cut the veggies all the same size (the size of the green peas) and put them in the bottom of the pie with the meat. Add a few tablespoons of flour over the top and add the beef broth to about 1/2 way up and butter all over that. Cut some cute design in the top crust and bake untill the crust is golden brown.

You could also make Greek food for something different.
Mix the lamb and beef together with some finely minced onions. Season with salt, pepper, oregano and mint. Bake this as a loaf (like a tureen or an American meatloaf). While that is baking slice tomatoes and onions. Mix 1 cup of plain yogurt and 1/4 to 1/2 of a cucumber grated and some lemon juice (if you have any). Serve with you chips for a quick Gyros. (if you have any pita bread avalible, it's really good)

Shepherds pie is easy - just fry off some mince, onions ans carrots. Add an oxo cube to the mixture (or one of those sachets of Colmans Shepherds Pie mix) and a splash of Worchester sauce if you have it. Put in an ovenproof dish, cover with mashed potatoes and sprinkle cheese on top. Put in oven at 160 degrees for about 20 mins, until the cheese has melted and gone brown. Serve with fave veg - I like peas and sweetcorn with it.

Good on you giving your mum a break. She'll be so delighted !

Make a shepherds pie with Lamb mince but use 2 parts Sweet Potato to 1 part normal potato for the mash on top. You don't need to add any cheese. Healthy and delicious!

Spagetti Bolognaise.

Fry some onions and carrots up until soft. Add the minced beef and then cook until browned, add some mushrooms and a can of chopped tomatoes. Add some tomato puree and a splash of red wine, Then leave to simmer for 20 minutes.
Add herbs if you wish.

After 20 minutes serve on a bed of spagetti.

Lasagne. Brown the mince in a little oil. Put 2 oxo meat cubes in when mince is cooking (watch, this will make mince stick to pan a bit). Slice 1 green and red pepper, 10 or so mushrooms, 1 onion and chuck in. Add a pasta cube and some oregano. Add tinned of chopped tomatos. Let simmer for 15 mins or so. Set oven to 180C. Use jar of white lasagne sauce (much easier and quicker than making your own). Spread some white sauce onto bottom of dish, then lasagne sheets, then mince, then sauce, then lasagne, then sauce, then mince, then sauce, then lasagne, then sauce and grate good dose of cheese over top. Put in oven for 30mins. This sounds timely, but trust me, its not!!!!!!! I have a 22 month wee girl and I can make it not probs even with her running around. Honest!! Whats more, you can re-heat it (only once again), the next day. Ideal to have with chips or salad. Good luck!!

Season & cook the meat, boil some pasta, combine & add spaghetti sauce! Easy as 1 2 3! & yummy!

burgers with sweet potato chips
Ingredients
1 sweet potato
3 tbsp olive oil
125g/4½oz minced beef
1 tsp Worcestershire sauce
40g/1½oz blue cheese
100ml/3½fl oz double cream
salt and freshly ground black pepper

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Cut the sweet potato into wedges and parboil for five minutes. Drain.
3. Season and coat in two tablespoons of the oil.
4. Place in a baking tray and roast in the oven for 12-15 minutes.
5. Meanwhile, mix the mince with the Worcestershire sauce and shape into a burger. Heat the remaining oil in a frying pan and fry the burger for 3-4 minutes each side.
6. Heat the cream in a small pan and stir through the blue cheese until melted. Season with salt and pepper.
7. Serve the burger in toasted bread with the blue cheese dressing and wedges.

mexican mince
Serves 4

1 Packet of mince
3 tbsp vegetable oil
1 onion, chopped
1 green chili, thinly sliced
4 tbsp lime juice
400g tin of chopped tomatoes
2 crisp, sharp apples, peeled
and roughly chopped
2 tbsp capers
seasoning
3 large potatoes, peeled and
cut into cubes
1 garlic clove chopped
2 tsp cumin
grated cheddar to garnish
This is a really original and delicious way of turning a simple mince dish into a memorable feast.

Heat 2 tbsp oil in frying pan and gently fry onion for five minutes, then stir fry meat until brown. Add chili, lime juice, tomatoes, apples and capers. Lower the heat, cover and simmer for 25 minutes, then season. Meanwhile, par-boil the potatoes for 10 minutes and drain. Heat the remaining oil in a large frying pan , add potatoes, garlic and cumin and fry, until golden. Divide the spiced potatoes between warmed plates and top with the mince. Lastly sprinkle with cheese and serve with lightly cooked green vegetables.

Burgers! Yum!

Chop an onion up really small and add it to the mince.

Add lots of salt and pepper.

And a small beaten egg.

Smush it all together with your hands, form it into patties and leave them to chill in the fridge for a hour or two before frying or grilling them.

just cook the mince add some ragu sauce and pour over the chips You could even add veggies if you like!
